FREEZE BREAD TO RETAIN FRESHNESS Homemakers often find it difficult to keep bread fresh these hot summer days. Marcile Allen, Purdue nutrition specialist, says that fleering is the best way to keep bread fresh for more than just a few days. If you have room in the freezer, save shopping time by buying bread in quantity. Recent tests have shown that bread wrapped just in the commercial wrapper keeps its freshness well when stored up to six months in the freezer. Most: homemakers don’t find it practical to store bread longer than this since a rapid turnover of food in the freezer is more economical. However, testing results have indicated that, when oven-wrapped with a. freezer packaging paper, bread may be stored in the home freezer successfully longer than six months. When making toast, remove the bread from the freezer and pop into the toaster frozen. The slices will separate easily while still frozen. Use the frozen slices, too, for sandwiches —they will help “refrigerate” the lunch.hox.
