New Style Hams Mean More Meat, Easier Cooking New-style hams spotlight fashions in food this spring, with oldfashioned pudgy' ham outlines streamlined to hare essentials. Skin, excess fat, and the shank or bock have alt been removed so that the thrifty homemaker will be getting as much as 14 per cent more meat from the same weight ham. Now on the market under many well-known brands, the shape of these skinless, shankless hams makes the real news. With only the “heart of the ham” remaining, they have a smooth, almost round appearance - And the advantages to the consumer are many. Tests of the new hams as against regular short-shanked hams of the same weight in Kroger Food Foundation home economics kitchen give the nod to the 1955 model quantity-wise. They average ten to fourteen percent more good servings of sliced ham per pound—with fewer scrappy pieces. There is little perpound difference in the price, and the added benefit of less waste makes them an economical buy. NO BURNT FINGERS Burnt fingers are no longer part of the .ham-baking picture, since dangerous skinning of the hot ham so that the glaze may be applied is eliminated. There is. no excess fat to dispose of. no ham hocks to use up, and no inconvenient sawing of bones to remove the shank. Although these skinless-shank-less hams are just now making their appearance in your supermarket, they are the result of many years of development and experimentation, on the part of producers, packers, and retailers. People have been eating and, enjoying hams . ever since the Romans first found out how to cure "them, simple and crude though their methods might have been. The Arheriean Indian added a chapter to ham History by teaching early English settlers in Virginia his method of curing and smoking the now-famous sleek and slender razorback hogs. * Thruout the 19th century, hams were still elongated in shape with a long shank and the skin left on. The saltiness and cure varied considerably from one iham to another. It took 60 ,to 90 days to cure a ham and homemakers still had to soak and parboil them before bakjpg. Today, the curing time has been shortened to 12 to 20 days. This results in a more moist, tender ham that can go right into the oven with no preliminaries and has the mild, sweet flavor most families prefer, instead of the strong, salty, smoky ham of years ago. With 30 seconds equivalent to 12 to 24 hours under regular methods, a juicier ham is produced. bake the cook-before-eating type EASY TO COOK Ham has the wonderful advantage of being the easiest of all meats to cook, with the simplest methods giving the best results. There’s no question about the outcome with these directions. Leave the ham out of the refrigerator for a few hours before baking it. Place the ham, fat side up, on a rack in an open pan. If you use a roast-meat thermometer, insert the bulb in the center of the thickest part of the meat. Bake uncovered and without added moisture. A cook-before-eating ham is done when' the thermometer reads 160 and. F., while a pre-cooked ham is done at 130 and. F. EASY ORANGE GLAZE About 45 minutes before the ham is done, remove from the oven and score the fat. Mix one 6-ounce can concentrated frozen orange juice as it comes from the can with V 4 cup brown sugar and V 4 teaspoon ground cloves. Spread mixture over the surface of ham and return to oven to finish baking, basting once or twice. No matter how you serve it, ham will taste better with this fluffy mustard sauce, r FLUFFY MUSTARD SAUCE Blend together V 4 cup salad dressing and two tablespoons prepared mustard. Whip V 2 cup heavy cream. Fold whipped cream into dressing- Yield: 1 14 cups sauce.
