HEATING MILK FOR SEPARATOR By G. L. McKay, lowa Agricultural College. The heating of milk for separation is not receiving the attention it should. It was my privilege at a great national convention to try and point out the defects in the butter exhibited. I found possibly 30 to 40 per cent, of the flavor was injured more or less by the use of live steam for heating the milk. It was an easy matter in most cases to select the butter where live steam had been used before reading the methods of making it, many using the exhaust steam from the engine to heat the feed water for boiler. Here we found the cylinder oil transmitted to the milk from the boiler, thus giving a decided oily flavor to the butter. The use of boiler compounds showed their injurious effects also. Why live steam should be used for heating milk at the present time is a mystery to me. Many of the live steam heaters not

The common name of this grasa Is smooth broome grass. It is a native of Europe and Asia. From the fact that it is said to have been introduced Into'this country from Austria-Hupgary, it is often called Austrian or Hungarian broome grass. It is easily distinguished from all other common broome grasses by Its smooth usually beardless glumes or chaff. The seed should be sown in liberal quantities on well-prepared ground. The forage made by this grass is coarse, but it is of excellent quality. The grass seems able to endure drought and also withstands considerable degrees of cold. Air-dried samples analyze about ten-per; cent, protein, which makes it exceedingly valuable for feeding. ' „

The heating of milk Is supposed to help the fluidity of the fat globules. The quick, flashy heating of milk has very little effect on the fat globules, therefore the separation is not as perfect. Milk should be heated for some" time before separation to get the best results. The centrifugal separation of milk is a wonderful process. Think of a separator bowl making from 6,000 to 20,000 revolutions per minute. Here we see sweet milk put into the machine and skimmilk and cream immediately separated. Most any separator will skim clean to a certain limit if the machine is run perfectly smooth and at the proper speed. A little vibration of the machine causes a remixing of the cream and no separator will skim thoroughly clean that vibrates. This is where some makers in large creameries lose possibly more than their wages. Successful Dairymen. The most successful dairymen are those who are willing to begin with small capital and work up.

New York.—The only woman In New York who is steward of a big hotel is Isabel Boyle of the Hoffman house, and so capable has she proven herself during her five years of stewardship that she has become the right hand of the proprietor. Mr. Caddagan, the manager of ths Hoffman house, claims that having a woman steward is his own idea, and the discovery of this particular woman is his also. Mr. Caddagan’s sisters Were sent to a convent in Virginia to complete their education and there as a fellow-stu-dent they met Miss Isabel Boyle, with whom they became warm friends. When they left the convent in Virginia the Misses Caddagan invited Miss Boyle to visit them in their northern home. This in due time she did, but hfer family had got into financial difficulties and the girl was anxious to carve out her own way in the world, so she asked her friends to help her to find a position. Mr. Caddagan, who happened to need an assistant steward, asked her if she would like to take the position. She accepted, and this was the beginning of her career. The writer, calling on Miss Boyle at the hotel recently, found her the center of an interested group gathered around the weighing scales just outside the office door. Miss Boyle called out, “Just you come right in here and give us your newspaper guess as to

She was interrupted every few moments by telephone messages, receipts to be signed, complaints to be heard, orders to be given. It was late in the afternoon and each department head came to hand in his list of needs for the morrow. Bach was received by Miss Boyle; each list was discussed for a few minutes; then the orders were placed on her files.. In the midst of this important duty an order came down to her for five dozen glasses for the roof garden and some coffee cups for another department. Miss Boyle handed over the glasses from the well stocked shelves and took a receipt for them. Miss Boyle is of medium height, with wavy dark hair and soft brown eyes; she has a cheery disposition and a fund of real Irish wit that carries her over many a rough place. She lives at the hotel to be on the spot when emergency demands her presence. She takes her vacation -in day trips to nearby seaside resorts or on. some of the automobile runs, which Mr. Caddagan plans once or twice a /week for the heads of his staff. It matters not whether found at work or at play, buying little- necjks by the thousand or weighing Virginia hams by the barrel, her personality Is bright and' refreshing. She is a woman who loves her work, so of course she has made a success of it. , ■ The Key. to the Bastile. The bastile was the-prison in which French kings confined political prisoners. Thousands of innocent persons were sent to this prison to avenge personal, grievances of attaches of the kings, who issued “letters de cachet” to their ministers and officers. In 1789-the people of Paris destroyed the bastile-after liberating all the prisoners.
