When planning a fish course, you can pretty well trust the canned food shelf for a year-round catch, for I was amazed to learn there are over 40 kinds of canned fish products on the market today. In addition to the long-time favorites for main dishes like salmon, tuna, shrimp, sardines and mackerel, tasty delicacies such as anchovies, caviar, lobster and smoked trout are good bets for party fare. Here’s a quick-to-prepare main dish using canned tuna, which can be ready for table service in about five minutes. TUNA QUICKIE
Add 1 cup of milk to a can of condensed cream-of-mushroom soup in a saucepan; heat, stirring constantly, to the boiling point. Add 1 7-ounce can of tuna which has been flaked into bite-sized pieces. Add !} teaspoon salt and ', teaspoon Tabasco. Serve hot over toast, baking powder biscuits, potato chips or noodles. Yield: 4 servings.
