EVERY homemaker who knows that a plank does things for food as well as for building appreciates the ease with which she can use one to produce a delicious dinner. Whether everything is arranged and broiled at the same time or foods are added according to length of cooking time planks are a delight, for they not only add a special gourmet interest to a meal but they save on the pot 'n pan detail, too. Consider this Planked Fish Dinner which Best Foods’ home economist, Nancy Holmes, planned. Cheer it, because with baked potatoes and a dessert your dinner is all done. Plankeéd Fish Dinner | 6 small flounder 14 teaspoon fillets cayenne pepper 15 cup real 1 egg white mayonnaise 6 tomato shells 14 cup pickle 1 No. 2 can relish Mexican style 1 tablespoon corn lemon juice 1z cup French 1, teaspoon salt dressing - Preheat broiler to 375°. Sprinkle fillets lightly with pepper and salt. Arrange fish on plank or lightly greased shallow baking pan. Combine mayonnaise, pickle relish, lemon juice and seasonings. Beat egg white until stiff but not dry; - fold into mayonnaise mixture. Broil fish about 2 inches from tip of flame about 6 to 10 minutes, or until fish is cooked through. Spread sauce in even layer over top of fish. Arrange drained tomato cases which have been filled with corn mixgd with French dressing on plank.@ Broil about 5 minutes longer, or until sauce is puffed and lightly browned. Serve at once 7 "7- 6 servings.
