THE average coffee-pot, believe it or not, is the most frequently used piece of equipment in the American kitchen. Unfortunately, judging from results, it is sometimes the most mis-used, too. Uniformly good coffee — fullbodied, clear as dark amber, fragrant—is merely a matter of following directions. Once you have learned how to make coffee the proper way, you will never think of making it otherwise. : The basic rules for coffee making —that is, the rules that apply to every type of coffee-maker — are simple. Here they are: : 1. Keep your coffee-maker sparkling clean, and scald it before using. 2. Start with fresh, cold water.

3. Allow two level tablespoonsful of fresh coffee to each three-quar-ters of a measuring cup of water. For demi-tasse service, use once-and-a-half as much coffee to the same amount of water. 4. Never boil coffee.

5. Be sure your coffee is the proper grind for your coffeesmaker. 6. Serve coffee immediately after brewing—and serve it piping hot. )To make good coffee in a drip coffee-pot, first bring water to rolling boil. Measure coffee carefully ‘into coffee basket. SCHEDULED FOR FEB. 21st Park .executives: from several states have made reservations to attend the third annual Great Lakes Park Training Institute, to be held February 21 through 25 at Pokagon State Park, it was revealed today. Officials of the Indiana Department of Conservation has announced that facilities at Potawatomi Inn will be at the disposal of those attending the five-day session. Last year, 130 park officials representing eleven states attended the institute. Reservations already received this year indicate

to each two tablespoons of coffee. When water has dripped through, stir hot coffee thoroughly to insure an even brew.

If you use a vacuum coffee-maker, follow the same proportions of water and. coffee. Heat water to boiling point in lower bowl. Insert filter in upper bowl and measure coffee into it. Turn down heat under lower bowl and insert upper section. When most of the water has risen to top. stir water and coffee briskly. After two or three minutes. remove coffee-maker from heat.

Cloth filters should be kept in water in the refrigerator between uses—never wash them with soap.

For percolator, measure cold water into pot and heat to boiling point Remove from heat. measure coffee into basket and return to heat Let it percolate gently for six to eight minutes That's all there is to it.

If you like sugar in coffee. try a tablet of saccharin to cut. calories.
