Sopa Syrupr.~A healthful and delicious drink for warm weather may be pre-| pared in thé following manner: One pound of wfitemgu and a halfan ounce of tartaric acid, put to boil ina quart of water. When nearly cold, add the whites of two eggs and a teaspoonful of corn starch, rabbed well together, Keep in a cool place, hnd when desired puta tablespoonful of the syrup ina tumbler of water, flavored with ‘wintergreen, and a half teaspoonful of soda . . | Other cooling and pleasant frinks nay be prepared from- the juice of currants, blackberries and raspberries. In their season extract the juice, scald, skim and can, without sugar. A couple of wine glasses full poured into an ice pitcher of water, and sweetened, presents a most inviting summer drink. 0
Exrtract oF LEMON~-The best of extract, and most economical, may be made by any housewife, by procuring an ounce of essential oil of lemon and a pint of the purest alcohol ; mix well, and put some bits of lemon peel in the bottle if convenient, Sometimes the oil will bear more alcohol. Extracts’ should be kept in g cool, dark place. = . o
.. GooseBERRY JAM.—Pick the gooseher ries when tiey are ripe and red, and put them into & preserving pan, with just water enough to keop thém from burning. As they warm, stir and bruise them to bring out the juice. Then add sugar in the proportion of three-quarters of a pound to a pound of fruit, boil slowly for two hours, constantly stirring to keep it from burning.. Then put away in jais, and let it get thoroughly cold beforelcovering. = - CurnaNT WiNE.—To three gallons of _currants add two gallons of water. Press the currants well to get all their juice, then strain.. To each gallon of juice add four' pounds of sugar. Fill the keg to within a few inches of the top, and if there is any danger of bursting, open the bung slightly. In November,rack off and “bottle, or clean the cask and put back the wine, and add of best brandy or whisky a pint to seven galions of tho wine.
