r.r r. r. i -th State Food and Drug I ornreif;;;oner. The "plan a gimten" movement which has swept the country will result in the production of a very large crop of perishable vegetables. Every pound of green beans grown on a eitv lot by that amount diminishes the demand for the market gardner'a simply, and what i true of beans is true of every other product. The next atep in our campaign for an increased food supply is the development of some method by which the surplus vegetables may be saved. The surplus grown by each householder will not be large. It would not pay to lake it to the cannery, and it may not be feasible to put it in tin cans or glass jars for such packages it may be quite impossible to get a sufficient supply in which to pack our surplus fruits. Fortunately there is a way by which we can prepare green vegetables so that they will keep without loss for many months. ; Our grandmothers learned the trick. They begun by drying apples and peaches by peeling, coring and qvurtering them and stringing the pieces like beads across a frame. Dried apples not so nany years ago were a staple commodity and in the country districts were exchanged like eggs at the grocery store for household necessities. .Many a child earned pin money by running the apple peeler and drying fruit. Sweet corn was cut from the cob while still green and dried over a gentle heat. Raw pumpkin was sometimes cut into pieces and dried and sometimes cooked with thick mush and dried in cakes sweet and leathery and never safe from children's foray, because of its chewing qualities. The old-fashioned method of drying fruits and vegetables is now being studied by exjierts. but they call the process dehydrating. The results are the same. Drying or dehydrating simply means driving out the water. In my laboratory I have built a frame which carries a series of trays made by cutting wire screen cloth into si)Uares about two feet across. On these squares green vegetables are placed before an ordinary electric fan. Running at slow speed a small fan will drive all the water out of such vegetables as green peas, or beans in a few hours, leaving them in perfect condition as to color and flavor and lacking only in water content. We have found it advisable to shred the vegetables before attempting to dry them. This is easily done with any vegetable shredder or by passing them through a meat grinder set as coarse as possible. Sliced potatoes are dried very 'adily. Any of the greens like spinacU or beet lenves muy be dried, packed in paper sacks and kept for a green vegetable dish long after the growing season. Small fruits like strawberries, raspberries and blackberries can be dehydrated very successfully. What the art of the canner does in conserving, a gentle current of warm air will save from wasting.
There will be much satisfaction next winter in eating green vegetables grown in one's own garden by the methods our grandmothers practiced years before there was any thought of a time when our food supply would be insufficient.
