There is-an impression HroaHcast tKat certain Hammond restaurants are profiteering in food. j Trie undersigned will unravel this erroneous impression to anyone who will take the trouble to investigate. To determine just what profiteering is requires an intricate knowledge of specific businesses and an acquaintance with their accounting. methods. We ask: Has anvone arrived at tangible and definite conclusions among those who have issued the challenge that we are profiteering? We shall answer this witK an emphatic "NO." The restaurants m question are operating on a very small percentage of profit as low as five per cent in many instances. True, certain foodstuffs Have 'dropped in price. Those that have dropped are the basic bulky foods, flour and potatoes furnishing good examples. i Of tKe more expensive foodstuffs, there has been only a slight decrease in price. Eggs furnish a fair example. Today tKe choicest eggs are as high as fifty cents per dozen.- During the high price period they fluctuated between 60 and 72 cents. There is no evidence they will be any lower than they are at the present time.
Labor hasn't decreased a penny from the peak reached in 1918 and 1919. Rents haven't dropped and there is no indication they will be lower -on the other hand, there is every indication that business property rentals in Hammond will steadily advance. Today we are serving only the highest priced foods obtainable, because we believe the people would rather pay a fair price for pure, wholesome efficiently prepared food than a low price and correspondingly low grade of food and service, prepared under xonditions that may not be the best. We could not remain in business and operate under a smaller margin of profit than we now maintain. We would not remain in business if it became necessary to sacrifice quality and service, for we still have a conscience within us. We firmly Believe you wrant the best at a fair price. Then let us continue to serve as faithfully as we have tried to do in the past.
