Allow to cooL Beat the; yolks of the eggs and ths su?ar t'.?'tii?r, stir them in, beat agin, and add the whipped whites. Pour into a pudding dish and set if. to a pan 'vf boilirig water, and b;iVe slowlv. Serve with sauce made of syrup of car.ned fruit. PRUNE SOUFFLE 1 voutid of prunes 4 w cites of eggs i teacup of sugar Htib nrtines that have been wellrooketj throtisth a sieve. Heat the eg$rs, very stiff, stir in the prunes and sugar enough to sweeten. Pour into an oiled pan and balie about twenty minutes in a hot oven. This is very light. Any marmalade nay be used In place of prunes, as plum, racil. Quince, crab apple. Cherry Roll Make a nice baking powde- biscuit dough, roll nut in an oblong piece, a little thicker than for pie1', and spread with seeded cherries.. Begin at the end and roll up carefully, pressing th edges together to make the fruit secure. Curl this roll around the stem of a rake pan. and place in a steamer over plenty of boiiintj wa'er. Cover closely, and do not lift the cover for one hour and a half, or until i'a pudding is t'aorouKhlv done. Serve with lernon or sugar and cream. Any fruit, fresh or cnae't. muT be prepared in this manner, edI the juice used for t ie sauce.
WELSH RAREBIT Take half a pound of full cream cheese, break, in small pieces and place la a saucepan or cha.lns dish. Ad4 salt, a spoonful of butter, two well-beaten fsss and half a teacup of ruh ini.k. Stir continuouaiy over boillu- water until the cheese n:elt3. Whiie hot. pour tlainti'y prepared Biicfs of crisp toast and serve Immediately on hot plates. A teacup of ale may be nsed instead of milk. This preparation is sometimes moulded and siicfvd cold for sandwiches,. An Almond Filling For a cake Is made by mixing one ccp sour cream, oae-half cup 8iii?&r and two eggs beaten slisrhtly. Cook 'until thick, then add one pint blanched almonds powdered or grated. Spread between cake when cool. A Delicious Pie Crust Mix with ft fork one cream cheese nri-I one-quarter pound ol sweet butter. When thoroughly worked in add one cup of flour and one teaspoon of salt. Place for one hour in the icebox. Roil out and fill pie as usual. Clearing: the Screens If you did not oil all your screens last fall before storing tbem for the winter, and you find them rusty, clean them with an old piece of ve'TFt moistened with kerosene. When dry. paint them with black screen varnish t.ninnel with turpentine, thereby avoiding clog-gin?; the mesh. ro not brush the serpens with a stiff whisk broom. This miRht caiiFe the mesh to bulge. Use a soft bristle brttch.
