FRENCH POACHED EGGS Put three pints of boflingr water 5n a saucepan and add one-half teaspoonful salt and one table spoonful rmegr. Stir vigorously around and areond the edfre of the saucepan, while the water is boiling:. As soon as ft well is formed in the middle of the water, slip in an ezz- Rnove to back of the range and cook until the white is set. Take out with a skimmer End trim. Repeat this until the number of eggs deijred are prepared.
SAVORY POTATOES Six potatoes, 2 onions, one tablespoonful of fat, Ji teaspoonful pepper, M teaspoonful l a Cupful of milk, X3 cupful of water, one tablespoonful of chopped parsley, cupful crated cheese. Place the fat in the bottom of a saucepan. Pare and wash the potatoes. Chop onions and parsley. Mix salt and pepper. Cut
tae potatoes m thm slices and put a layer in the saucepan. Sprinkle in a little seasoning, then onion and parsley. Repeat until all are used. Pour in water, cover tightly and cook fer twenty minutes. Pour in milk and cook another fifteen minutes. CANTALOX PE PICKLE Three pints of vinegar, four cantaloupes, three and one-half pounds of suar, one ounce of stick chinamon, two tablesooonf uls whole cloves, one ounce white sringer, one ounce celery seed, one ounce of white mustard seed, one teaspoonful ffrourid allspice. Take four cantaloupes, not nuii2 ripe. Peel and cut in small pieees and put in a weak brine for 24 hours. Pour this off and allow to

For this make a syrup of three pints of vinegar, three and one-half pounds of Bu?ar, one ounce of stick cinnamon, one ounce of white ginjrer. one ounce of celery seed, one ounce of white mustard sed, one tablesnoonful of ground allsnice, two taolespoonfuls of whole cloves. After boiling the meon in clear water, until tender, drain and lay in sym$ and boil altogether vctil done.
