In crdfr to successfully estadlsh a delivery ?ervice In Indiana Harbor and compete with the Indiana Harbor dairies. Mr. Allen has equipped his plant throughout with the most up-to-date machinery that he could ohtaln. The additions to- this plant have cost much money -but he predicts that the increased business will soon repay him for l is outlay. Every effort Is "belnr made at the Fralrie View plant to furnish sanitary and clean milk tc the customers. In order to Insure proper refrigeration which now gives him colder refrigeration than was possible with Ice. The milk is pasteurized at a temperature of 140 degrees, is then cooled to 36 degrees and after being- hot'led at that temperature Is kept at the temperaure In he refrigeraor until It Is put cm the walsrons for delivery. All surplus milk is utilized by heinar run through a cream separator and the cream that is secured, after ruffleier.t for delivery is hottled and churned Into hutter. Buttermilk and cottare cheese are also by-preducts of the dairy. Kverythlnar In the plant Is done by machinery of the jnost modern type ar.d practically all hard work Is eliminated alonjr with its many possibilities of dirt and disease.
