For this reason, two persons should work together when canning corn one person cutting it from the cob, and one person ftllinir the sterilized jars with it. Quick handling Is also necessary when blanching it in hot water and plunjcinfc it into the sterilizing eutrU as soon us they arc packed. If the housew-ife cannot have a helper l:i this work, however, she should handle only enoujth corn at once to fill one Jar; should blanch, cold-dip, fill the Jar, pour on boiling water, add salt, place the rubber and the cap in position, and put the jar Into the hot water outrr at onct thus, doins only one jar at once in order to get quick action. - The following are the specific direc
tions to be followed: Corn Remove husk and silk. Blanch five minutes in hot water. J'lun.ae into cold water. Cut corn from cob and pacU directly into hot Jars to within '., inrli of the top of the jar (fill no fuller th;ui this, its corn expands. ya littlv in proces--Iv.ts). Fill with boiling wnter. Add mi" teaspoon salt per quart. Partially seal.
Sterilize for three hours in waur bmh outlet. Turn upside down on a tray lo cool and test for leakage. 1T it is desired to can corn on the cob, follow these same directions, but have Jars of such a size that whole ears may be packed in them.) Si ,r??JJ Corn chosen for csnnlriff shmilu in. just between the milk stage and ihe doutrh state. Although some waters of high mineral content result in hardening peas or clouding the water in which they arecanned, carelessness has much to do with the successful canning of this vegetable. For instance, when peas are keeping wU. yet the liquid in which they are canned is cloudy, this generally indicates that the peas were roughly handled in blanching and cold-dipping. that split peas were allowed to be canned with perfect ones. This is a mistake. Only peas with an unbroken skin should be chosen for can
ning, and never old peas. Tf the Mousewife wishes to put up peas even though they be old. she must t;tke very fpociil rains In blanching them, asi this process is likely to crack their skin. The following are the tpeoitie directions to bo
followed, and I have grouped this veg.table with lima beans because the fame directions serve for both:" Ieas .and .Iuia .Beans Shell and blanch in live steam for five to ten minutes. Cold dip. Pack in sterilized hot jar; and add boiling water till jars are full. Add one teaspoon of salt to cacti litait. Partially seal. Sterilize in water hath outfit for two hours. Invert jars to cool, and t. st for leakage.
