SUGAR CRISIS
REVIEWED

In consideration of the patriotism o,
the. housewife who has sought to follow
the- suggestions of the United States Food administration to can and preserve all the vegetables possible, for use In a possible, emergency during the coming winter, J. E. Larger, head of the sugar division under Dr. Harry E. Barnard, federal food administrator for Indiana, directs attention to the following facts in connection with the present sugar crisis; It is necessary to conserve sugar during these canning months because: (a) We need the ships which bring sugar from a distance into this country for other purposes. (b) Some of the countries closest to v;s from whom we might import have a email sugar yield this year. (c) Our own domestic sugar crop Is smaller than we expected. (d) The submarine has sunk ships containing sugar. In order to take care of the needs of our Army and Navy nnl to give to our Allies the amount they must have which

Is less than we keep for ourselves, theso things are necessary: a) No person should use more than '4 of a pound of sugar a week. This includes sugar used In all forms of food. It may be necessary toon to still further reduce this apportionment. (b) The canning and preserving In the household should be done in such a way as to use tho lenst possible amount oX sugar. T'nles we are careful we may have a sugar shortage. This can be prevented only if earh individual uses no more than his share of sugar. Some must use even less thart a full share. If we think our allotment of sugar small, let us compare it with the allotment of ether countries. "We may have 2 pounds of sugar apiece month. The English msy have 3 pounds of Kupnr nplece each month. The French may have 1 pound of sugar apiece each month. The Italians mfiy have 1 pound of sugar apiece each month (when they can get it r3 you know that your sweet tooth consumes as candy in a year enough sugar to meet all sugar requirements under the rationing standard of Kngland for 1 year Or France for 1 year Or Italy for 2 years? That the money spent In the United States for candy In 1 year is double the amount required to feed Belgium for 1 year? We need only enough sugar to make our meals ralatable. One and one-half ounces or about thre level tablespoons of sugar or Its equivalent !n honey, molasses or syrup a day ior each person will do this. This includes the sugar or sugar substitutes used In cooking. How sugar may be saved: By using sweet dried fruits as dates, raisins and figs to sweeten desserts and cereils and in place of candy. By using honey, syrups, maple sugar end molasses to sweeten desserts and beverages, in making cakes, cookies frosting and as far as possible In canning and preserving. By canning fruits without sugar and by making fruit pastes where the natural sugar will give most of the sweetness. By omitting sugar from tea, coffee and cereals or If it is used by mixing It completely with the food and eating all of It.

To this -nd she will continue her struggle for world wide democracy even after CJerman militarism has been crushed and the after the war trade competition begins. This message by Chairman Hurley of the shipping board was given to the Latin American diplomats from Washington at the Hog? Island ship yards near here today. Hurley declared that the great emergency fleet now being turned out is dedicated to freedom and that after it has served its immediate purpose of defeating the common enemy it will be equally effective as an instrument cf an endur

During the warm weather the housewife will encounter trouble with insects in cereals, which if net properly attended to will mean a serious waste of food and make it difficult once the insects become numerous to keep them out of food products in the house thereafter. The only safe method of preventing insects, worms or bugs from developing in your cereal is to heat the cereal as soon as it is brought into the house, the food administration states. By cereal intended all wheat flour substitutes and all meals and breakfast foods. Goods bought in sealed packages have been sterilized during manufacture and need not be sterilized again if the package has not been broken or
i punctured.
Heating is done in the oven at a temperature of 1S3 degrees Fahrenheit and should continue f-r 45 minutes.
