In the bottom of the lined plate put a layer of thinly sliced onions, cover with a pound of raw tender round steak and plenty of suet cut In small cubes; season well with salt and pepper, then cover with a thick layer of thinly sliced potatoes; season again, add one tea spoonful of water and cover with a crust. OPUL-AU etymology, which is akin to "fireside law."

states that the word "news" Is derived from the initials of the four points of the compass North. East, West and South and that the weather-vane symbol was phi cud at the top of a number of the earlier newspapers to indicate tliat they collected their information from all parts of the earth. The latter statement may be true, but the former can hardly be credited for the reason that the word "news" was used by Shakespeare; some fifty years or more before the tpubllcation of the first news-paper. A study of the equivalent word In (lerman and other langiinges will further show the fallacy of the compass-theory. The Teutonic word is Heiligkeiten and the French notivelles and it is Impossible for either one if these to be derived from the points of the compass which, in the two languages, are represented by the letters "X. O. YV. S." and "X. E. O. S." The German las neue appears to be much closer to the English "news. - but the word was really derived from the AngloSaxon niwes, as clearly Indicated by Herner's translation of Froissart, published in l.V)0, in which it is spelled "newes." In a moderate oven. Test to see If the potatoes are tender. Itemove from the oven and let stand five minutes well covered to steam mi' soften the crust. Then serve. This will make a dish sutlielently nourishing for a main dish and will be found most excellent. Potatoes au Gratin. Cook together two tablespoonfuls each of butter and flour, then when well Mended add one cupful of milk, cook, stirring until thick. Add one cupful of grated snappy cheese; when melted add a teaspoonful of lemon Juice. In this hot sauce stir two cupf ills of diced cooked potatoes and heat until hot. Put Into a greased baking dish, rover with grated cheese and oyer this a coating of buttered crumbs. ISrown In the oven and serve piping hot. Orange and Date Salad. Stuff a box of dates with one-half cupful of walnut meats chopped and mixed with one cake of pimento cheese. . Itoll in lemon or orange juice and place alternately on water cress with sections of oranges. Serve with French dressing. Stewed prunes and

nuts and dates for variety. Cornish Squab Pie. Pare and slice three medium sized apples, slice one onion and one and one-half cupful s of cold lamb or mutton, put Into a saucepan and stew all together adding one-fourth of a teaspoon of allspice, a cupful of stock or gravy and one-half teaspoonful of salt. When the apples are soft, put Into a well greased baking dish and cover with a rich biscuit dough rolled out one-half inch thick. Hake In a hot oven until the crust is brown. Candle Light Salad. Place a slice of pineapple with half a banana for the candle, topped with a maraschino cherry. Serve with French dressing. . 1021. The life outdoors with the pretty birds they raise, the feeling that they have a home of their own and are their own masters, and the genuine Interest of the work are all factors In this result. Rut the young woman who turns longingly toward chicken raising, especially at the prevailing prices for eggs and poultry, needs to stop, look and listen. If she can afford the time and

money, a two-year course In some agricultural school or college will be a fine thing. IUit she can do without this.. She can get excellent books on the subject, and If she Uoks about a little she may be able to get some practical experience on a poultry farm. One sur..mer would be a great help if so spenc. Successful raisers agree that It takes four or five acres of land and about five hundred pullets to make a start. The same experts say that It requires at least 2,000 chickens to make a good living. This means plenty of work, especially in the hatching season. With that number on a wellmanaged ten-acre lot a girl can count on a fair income. She can supplement her profits by keeping pigeons, that are also a good investment when you know how to handle them, and further by having a healthy little settlement of hares and rabbits for the market. States' Debts Increase. In CI of the 4S states the revenues exceeded the expenditures for governmental costs. Including Interest on lndehtedness and outlays for permanent Improvements by $50,192,314. or Tl.G cents per capita. Franklin D. Roosevelt, Democratic candidate for vice president, was asked whether, if elected at thirtyelght, he would be the youngest vice president of the United States. He did not know, but hoped some of his friend would look the matter up. John Cabell Breckenridge was elected vice president on the Democratic ticket with James Buchanan in 1S."(J. He assumed otlice March 4, when he was thirty-six years, one month and fourteen days old. When Breckenridge completed Iiis term he was candidate for President ns representative of the slave-holding interests, but was defeated by Lincoln. The same year he was elected to the United States senate, but soon afterward joined the Confederate army. From January to April, he was secretary of war In the cabinet of Jeff Davis. He died In Lexington, Ky., May 17, 3S73.
