Carrots Flemish Style. "Wash and scrape a bunch of young carrots and cut each one Into quarters. Cook In salted boiling water for ten minutes and then drain. Melt an ounce of butter in a saucepan, put in tho carrots, sprinklo them with flour, salt and pepper and a pinch of
sugar ana toss them about for flvo
minutes. Stir In a half pint of meat stock and let simmer on the back of
the stove for 15 minutes, occasionally stirrings. As soon as the carrots aro
cooked draw them away from the fire until they have cooled somewhat. Beat the yolks of two eggs into half a cupful of cream or rich milk. Stir this Into tho carrots and cook gently until tho liquor thickens, but do not
allow to boll. Serve in a hot dish and Bprinklc over with minced parsley.
