Fresh-baked, fermented bread is unwholesome for the reason that it has not yet undergone the change by which the Imking is completed. Take a bit of the iiihide of a loaf and roll it Imtwecn the thumb ami finger, and it will form a mass almost as hard a a bullet because of the large amount of free moisture which it contains. 31y the next day this free water will undergo chemical combination with Die par ticles of flour, and then if It be rubbed between the thumb ami finper it will crumble. This molecular combination is the same as that by which moisture in the air from a boiling kettle of water is first sensible as steam and then become diffused into the air of the room. So the water in the bread i6 first sensible, and afterward rendered hygroscopic in connection with the gluten. Take a lonf of stale bread, put it back in the oven, heat it to a high temperature and it becomes like new bread, the moisture being again free. Xew bread when taken into the stom ach forms hard masses as it docs when rolled between the fingers, and the only way the gastric juice can act upon it is from the outside of the lamp. If bread is in condition to crumble, the gastric ialee can attack it readily. These bul lets of dough of new bread arc dis solved by the gastric juice in the same relative slowness n the air of a warm room would dissolve larre chunks of kw, when if it were broken into minute fragments, the air would reach it from all sides, and speedily convert it into water. Settler from Dakota drive aeroaa the international boundary Into the Canadian Xorthweet, all along the frontier, being anxious to share in the prosperity of what appears to be a marvelously productive country. 5T Quite a number of families will move from Ontario to Grenfell, and other points In Eastern Assinibola early in the spring. Since September last twenty-seven families have left Michigan and secured new homes in Manitoba and the Cana dian Northwest. A short time ago a caravan of five wagons bearing the families and household effects of a number of French settlers passed through Morden, Manitoba, on their way to new homes near Carman, Manitoba. These settlers had driven all the way from Kansas. Mr, P. Burnett, of Craiglea, Manitoba, lately sold 800 acres of land to two Canadians who eight years ago emigrated to Dakota, but who have now decided to locate in Manitoba, being satisfied that the Canadian country offers the best chances. Every indication points to an immensely increased settlement in the Canadian Northwest next season. The manifold advantages of the country are now better understood and practical farmers and others anxious to better their conditions in life are turning to the Canadian Northwest. If one paints a peasant woman one performs the act of a thinker; but if one uaints a woman of society, one is held to perform an act of fashion. Why? A woman of society has, nevertheless, looked at the sky of tenor than the peasant woman. Alfred Stevens.
