The matter is om of general Interest, and the most of the statement therein referring to Missouri are equally applicable to other States: On March 8, 1878, Congress passed a law providing 44 that a census of the population, wealth and Industry of the United States shall l taken on or for the date June 1, im)," and established, 1h the Department of the Interior, a Cenua olfiee, with a chief ortlcer called the Superintendent of the Census, to he appointed by the l'rosliknt, and enumerator, to be ik'.U;iiRted and cmployed by the Supervisors of Census, with tlie onwrent of the Superintendent. Prof. Frsnoi A. Walker has imn appointed Superintendent of the Census. The law requires the Secretary of the Interior to dotdgnattt the number of Supervls. ors of the Census to ue appointed within each State, front resident of nueli State, not to excot'tt, in all, one hundred and fifty. The Secretary of the Interior has apportioned to Missouri seven Supervisor' of Census, but ka not yet Nov. 1st designated the iKnitidaries of the seven districts", but will do so at an carlv date. The i-cven Supervision! of Census will not be appointed before December, 1879, and prolmbfy not before January. 19W. The law provide that "each Supervisor of Census Miall, unon the completion of his duties to the hat i.J faction of the Secretary of the Interior, receive the sum of live hundred dollar, In full compensation for all cervices rendered and expense Incurred by him, except an allowance for clerk hire may be made, at the discretion of the Superintenddent of Census." Applications for appointment to the poslof Supervisor of Census may bo addressed to the Secretary of the Interior. Tlie actual work of enumeration within each Supervisor's dUtrict will l performed bv tho enumerator:), to bo designated and employed by tho Supervisor or each tIMrlet, when appointed With the consent of the Superintendent. Tho enumerators will not bo appointed until after the appointment and continuation of tho SupcrvJ-ors, HueJi Su-pervl-or of Census will apportion his district Into KubdivisionH 1110.-4 convenient for tho purpose of enumeration, not to exceed four thorn-ami inhabitants to each Hikllvi-ton, according to theceiiu-f of IfiTtt. In the grew majorityof InstnneestheMilidivi'sioiHor enumeration dl.-tricts will eoiitnln less than four thoHHtttd inhabitant, and in all probability each municipal towwbip will compose a subdivision, excepting townships whoso population raav exceed the maximum limit. Applications for appointment to tho po 1tion of enumerator must. he addressed M-tho Supervi-or f the district in which the applicant resides, ami each enumerator must bo a resident of his siiIkUvMoh. Hence application for appointment as enumerator prior to tho appointment of the respective Supervisor are premature and can be of no service. The enumeration will commence on tho lltut Monday-in June, 1SS0, and in cities having ever 10,000 inhabitants under the census of 1870, within two weeks from the first Monday of June, 18$), and must lm completed in tife country oh or before July 1st, The compensation allowed to any enumerator in any district east of the lOOtli meridkti (ud consequently in tbe whole State of Missouri), will not exceed an average of ? per day of 10 hours' actual field work each, and can not, therefore, much exceed 100. Having received numerous letters relative to the appointment of Supervisor and enumerators, and tho taking of the Tenth Census, I deemed the foregoing information of sulHclcnt Importance to Justify Its publication. The attention of the people of Missouri can not be too urgently called to tho importance of securing a full and complete census of the population, wealth nnd industry of our great State, which will place her in her Justly proud position among tier f-Mcr States. I deiro to call the attention of the aeneulturNtaof the State to Hio fact that Prof. P. A. Walker, Superintendent of 1be Census, ha iwMed a circular In relation to productions of agriculture, intended to secure greater accuracy than in the last three census In the agricultural schedule. The liability to error is decreased by the limitation by law of the time for the present census tc the month of June. Beat the butter ' ami sugar well together at first. Then j add the rest, leaving out the whites of j four eggsi for tho meringue, ! Scrambled Kggs: Break three eggs j into a Himll stew-pan; add u .saltspoonful of salt, a quarter of that quantity of pepper, and two ounces of fresh butter j (tho fresher the better) ; set tbosUnvpan f over a moderate tire and stir the 'ggs around with a wooden spoon, being carc- ' ftil to keep every particle in motion, tintil the whole has become n .smooth and delicately thieksubstanee; have ready a convenient sized piece of toast, pour the eggs upon it and serve immediately. Fried Cabbage: Cut the cabbage very line, on a slaw-cutter, if possible; salt and pepper, stir well and let stand live minutes; have an iron kettle .smoking hot, drop one tablespoonful of lard into it, then the eablMge,stining briskly until quite tender, send to bible immediately. One-half cup sweet ereani and three tablespoonfuls of vinegar, the vinegar to be added after the cream has been well stirred, ami after it is taken from the stove, is an agreeable change. When properly done an invalid can eat it, and there is no offensive odor from cooking it. Rico Griddle Cakes: One cup of sifted Hour, two cups of warm new milk, three eggs, one eun of lmilcd rice, teaspoonful of salt, large teaspoonful of baking-powder. Mix the Hour with one cupful of milk, then add tlte rice which must be newly boiled, or reheated by steaming and then beating light with a fork and thin with the other cupful of milk. (All of this last cupful may not bo required to reduce the mixture to the proper consistency.) Beat the yelks ami whites oparately, whipping in the yelks first and the whites last. Add the baking-powder mixed with a little Hour and hake at once. Soups : All vegetables arc available for soup. The favorite vegetable soup made from fre.jU tomatoes, corn and Lima beans is almost as irood when tho canned vegetables are employed. For chicken soup with riee and milk, not herbs but parsley should be used, Tho ! shin of veal or beef is the legitimate soup-bone; but any other bone may be used. Crack the bones before boiling, for tho sake of the marrow, and do not : nut salt in until the meat has been well boiled--it has a tendency to harden the libers and prevent the How of the juices of the meat. Von can not well boil it too long, short of the time when the meat boils into rags and .trings.
