Many Northern pastures are gradually failing because milk, cheese and wool, all rich in phosphates, havo been sold from the farm. There is a diflerence in the manure from a milch-cow and that from a fattening cow. Tho fattening animal takes mainly the carbon and albnminoitls needed to form fat and lean meat. A cow giving milk, or a growing young animal, ab.-tracts from the food tho phosphates to form milk and bono, and thu result is a dcliciency of this element in the manure. Selling butter dues not have this uficct if the buttermilk is fed on the farm and thu manure saved. Kxccptlng the oil, the buttermilk contains the filrenglh-giving and ilesh-foruiing elf meats of wholu roilk ; but tho whey from mini is of little value for feed, neither doe it make valuable manure. The discovery of phosphate rock in tho South is of untoenso importance to its agricultural fu ture. Of course its first uso will bo on cotton or other cultivated crops; but with improved farming, moio attention w'd bo given to renovating old and worn-out pastures, and when this is attempted, phosphate in some form will be found tho most essential element. Mix tho Hour to a smooth batter with the milk, add the eggs, which should be well whisked, and put tho latter into a well buttered pie-dish. Wipe the apples clean, but do not pare them; cut them in halves, and take out tho cores; lay them in tho batter, rind uppermost; shako the suet on tho too, ..1 ... .. . bako in a moderate oven for an hour, j and cover, when served, with siftod loaf sugar. This pudding is also very good . with tho apples pared, sliced aud mixed ' with the outter. Plain liu a.l pound of Hour, 0 ounces of good butter, I pound of sugar, 1 egg, nearly i pint of milk, 2 small teaspoonfuls of baking-powder, a few drops of essence of lemon. Warm the butter, without boiling it; bent it with a wooden spoon ; stir the flour in gradually with the sugar, and mix these ingredients well together, Make the milk lukewarm, beat up with it the yelk of tho egg aud tho essence of lemon, ami stir these to the Hour, etc, Add the baking-powder, beat the dough well for about 10 minutes, divide it into 2 1 pieces, nut them into buttered tins or cups, and bake in a brisk oven from 20 to 80 minutes. Chow-Chow Take small pickles, 2 quarts of silver onions, 2 quarts of green string-beans, 1 dozen green tomatoes, 3 heads of caulillower; let tho onions stand in brine 12 hours, then peel- If the beans aro largo break them. Slice tho green tomatoes, cut up the cauliliowers; let all stand in brine 21 hours. To 1 L'nllon of vineisir use oneuoundof mustard (ooinnion is tho best), mix it with x little vinegar, and add it to the rest. I or 2 tablespoonfuls of oil of mustard, 1 tablespoonful of cayenne i pepper use more spices if preferred. boil in the vinegar, lyeftire adding the mustard. It can be put in preservejars in alternate layers; fill 1 full; when lining the jars add hero anil there a littie red and irreeii pepper; fill up with tho mustard ; make air tight, An Old Crime Recalled.
