Gen. l'lo&sonton, an older brother of tho well-known cavalry oflicer of that name, has a harmless hobby ; at least, it was harmlosa so long as he kept it to himsolf. IIo got tho idea when, how, or why does not appear that sunlight transmitted through blue glas has a peculiarly invigorating effect upon animal and vegetable life. He sustains it by something that looks like a scientitio theory about the actinia rays of the sun, the chemical action of those of one part of the spectrum, tho development of electricity by tho suddon interruption of all the rays oxcopt the blue one, etc. It is a theory that will not bear examination bv a real scientific scholar, but scientific scholars aro not common, and it has a plausible look, which is sufficient to impress those who do not comprehend it. But, apart from his theory, Gen. I'leasonton professes to have tested tho effects of light coming through blue glass by a variety of experiments. Uy covering a grapery with glass, every eighth pano of which was blue, ho got a vigorous growtli of vines, and abundance of excellent fruit. Possibly he might havo secured the same rosult if none of tho glass had been blue, but he docs not tell us any thing about tiiat. He tried a similar experiment with pigs, and those which were favored with blue light flourished apaco ami grew fat. So did tho others, and there was precious Httle diflbrenae, so far as wo can make out. But the important feature of tho alleged discovery of General PJeasonton, aud that, which has given lise to tho mania, is the supposed effect of light coming through bluo glass upon tho human system. IIo claims that it is peculiarly invigorating, and counteracts In this state of man the tendency to disease and decay. Ixit any body start a notion that a tarred string worn around tho neck will be a sovereign remedy against catarrh and all tho ills that affect tho throat, and in six months plenty of certificates and testimonials can lie obtained of tho wondrous cures that it has effected. Tho imagination has remarkable curative powers in itself, and, besides, a euro that is purely imaginative is just as good as any other ior mo purpose oi proving tno emcacy of blue glass or tarred strings. The bluo glass epidemic will havo to run its course. General I'leasonton first published his book six years ago and now has brought out a new and en larged edition. Hotion Plum i'udding.l cup of sweet milk, 1 cup of molasses, 2 cups of stoned raisins or currant, 11 cups of sifted Hour, 1 cUppf suet, ehoppea fine, I l teaspoontui of soda, arm Mtit; pur. soda in molasses, add milk, flour, suet and salt ; steam three hours ; sen e hot, with sauce. Qinyir It oils. I pint of molasses, i pint of butter or lard, 2 eggs, 2 tablespoonfuls of ginger, 1 tabespoonful soda dissolved, in 4 cup of water. Mix over night, or let the dough stand till cold; it rolls out easier, docs not stick to the board ; cut them in strips of threo inches wide and four long, and crease crosswise with & knife, Jlice Soup. -Pick and wash a handful of rice, boil in salt water till the grains just burst; drain tho water oil, and leave tho saucepan at tho sido of the fire, covered with a damp cloth. At the time of serving, put as much rice as is wanted into the saucepan in which the soup (well flavored atd clarified stock) is being made hot, and as soon as it boils send it up to table. Chicken llroth.Tfiko a fowl, and having drawn it, scald the legs and remove the touh skin from them ; cut up tho fowl into small pieces, bonos and all, and put them into a saucopan with about 1 quart of water, 2 teaspoonfuls of rico, a blade of mace, pepper and salt to taste ; boil very gently (removing all scum as it rises) for 1 hour, take out the white moat, and simmer the rest for 8 or 4 hours more; strain the liquor through a napkin, free it from fat, and serve. Serve either plain or with hard sauce ; my rule for tho sauce being a cup of granulated su gar to 4 cup of butter well beaten together, and flavored with either vanilla, eaion, or grated nutmeg.
