A more expedition method than the above is to cook the jicachea (ueeled or impeded) in a jior-eclain-llned kettle, with suttlcient water to cover them until thev are quite tender. In the meantime have all the cans and covers ready, and heated by lcinr tilled with hot water; when the fruit is ready, empty out the water, dip up the fruit w ith some small utensil like a teacup with a handle, till the cans quickly, set them on a heated plate or board, wijie the tops and seal at oik'. Soak one pint of picked and washed tapioca in three pints of lioiling water, letting1 it stand thr' hours, then plat' In a glass fruit -can a layer of slittl reaches, with sugar enough to sweeten them, then a layer of the soaked tapioca, adding alternate layers until the can or cans are tilled. Then set in a kettle in two-thirds their depth of water, heat to the boiling point, ami then twil lialf an hour ; take mm and seal precisely as you would any canned fr.,it.
