HOUSEHOLD HINTS.
Recife fob Rice Pie. —One cupful of rice, one cupful of sugar, two eggs, two tablespoonfuls of corn-starch, enough milk to fill two deep pie-diahes; have the dishes lined with good, rich, pie-crust. English Cookies.—One cupful of brown sugar, half cupfnl of butter, one egg, two tablespoonfuls sonr cream, a‘little soda, cloves, cinnamon, nutmeg; make hard enough with flour to roll out; cut in thin cakes. - -
Custard for Cake. —The juice of four lemons, two eggs, one teacupful of sugar, one teacupful of water, two tablespoonfuls of corn-starch; mix all together ; set the dish in boiling water; keep boiling till it thickens. , Lemon Custard Cake.— Four cupfuls of flour, six eggs, two cupfuls of sugar, one teas poo aful of cream of tartar, one teaspoonful soda, one cupful of butter, one cupful of milk; bake same as a jelly-cake; put custard between each layer. Sweetbreads.— Scald them in salt and water and take out the stringy parts, then put them in cold water for a few moments. Dry them in a towel, dip in eggs and crumbs and fry brown in batter. When they are done take them on a dish, pour into the frying-pan a large cup of sweet cream, a little pepper and salt and a little green parsley chopped fine. Dust in a very little flour; when it boils up pour it over the breads and send to the table hot. - Bakers’ Buns. —Mix one and one-half pounds of sugar with two pounds of flour; make a hole in the center of the flour and pour in half a pint of warm milk and two tablespoonfuls of yeast; make the whole into a batter and set the disli before the fire, covered up until the leafen begins to foment ; add to this one-half pound of melted butter and milk enough to make a soft paste of all the flour, and let it rise again for half an hour; shape the dough into buns and lay apart on a buttered tin in rows to rise for half an hour; bake in a quick oven. A few currants are added with the butter.
