After eating with all of those fattening foods during the holidays, one should be looking for some easy low calorie dishes. At the Panhandler, Pauline Lumeng came up with an easy Chinese recipe that was not only delicious, but nutritious as well.
CHINESE CURRIED BEEF 2 lbs. boneless beef cold water chuck 2 T. oil, preferably peanut 2 med. onions, cut in half 3 T. curry powder, or to taste lengthwise, then in medium thin 2 med. tomatoes, peeled and diced crosswise 3 cloves garlic, minced 2 T. packed light brown sugar 41. cornstarch blended/ 4 t. water 11. salt, or to taste
In large saucepan place beef in cold water to cover, bring to boil, then at once pour off water. Cut beef in 1 inch cubes; set aside. Meanwhile heat oil in rangetop casserole or Dutch oven and saute onions over medium heat until golden. Stir in curry, sauteing a few minutes. Add tomatoes and garlic; stirring gently for a few minutes. Stir in beef and sugar; cook over low heat several minutes. Cover casserole, cook on stove top or in 275 degree oven, stirring 3 or 4 times for V/i hours or until meat is very tender. Add blended cornstarch; cook and stir until thickened. Taste, then add salt. Cool and refrigerate. To serve bring to room temperature, then reheat in covered casserole or heavy saucepan over low heat on top of range. Serve over long grain rice. This recipe serves eight people.

Rachel Glasser celebrated her 30th birthday at the house of her sister-in-law, Jane Yolles, on Monday, Oct. 12. As Mrs. Glasser is a native of New Orleans, Mrs. YoUes served a New Orleans-style luncheon. Rachel is married to Bob Glasser. Her in laws are Ann and Richard Glasser. Mrs. William Meyers just returned from a trip to Shelbyville and Lexington, Ky. There, she spend two days antiquing and racetrack-going with her daughter, Sue Jacobs. The two also visited the Headley-Fleischman Museum in Lexington. This was the first time mother and daughter had taken a trip together in 20 years, Mrs. Meyers happily reports. Mrs. Frances Leopold recently visited her mother, Mrs. Edith Fine of Richmond, Va.
