Fresh and Smoked Meats. In preparing this article for an issue of The Democrat, showing the magnitude and diversity of the business interests of Rensselaer, the meat market of J. J. Eiglesbacb, a model establishment of its line, cannot be overlooked. Mr. Eiglesbach’s market is on Washington street and is one of the most popular markets in the county. There will be found at all times a choice stock of fresh and smoked meats, lard, sausage and all the table*delicacies, in the line usually carried by a first class meat market. All meats handled by this market are noted for their freshness and purity, and this, with the prevalent reputation of the establishment for filling all orders promptly, has gained a large trade. Mr. Eigksbach looks after the wellbeing of his customers carefully, and makes a specialty of choice, juiey-eHte, and tender meats. At his market every facility is at hand for the proper care and handling of stock, such as cold storage, nice clean counters, blocks and fixtures, etc. He buys hides, tallow, lard of farmers and pays the best prices. He makes the sausages sold here using the best meats, and cures largely all their bacons and other meats. All in all, it is an up-to-date market, conducted in a highly satisfactory manner, while the proprietor is personally a well posted man and enjoys the respect and good will of all citizens of Rensselaer.
