Cream cf tartar, as is well known, is a bitartrate of potassa purified frcni the crude tartar, or argol, which collects in a crjEtalline deposit upon the bottom and sides cf wine casks during the fermentation of the wice. This tartar, in its crude state, contains lime and other impurities, which no process cf refining, known prior to that here described was able to entirely remove. It has been possible. It is trup, to neutralize the lime to some extent by the aid of chemicals, and this method wa resorted to in crder to procure crea-u of tar tar in imall quantities for phirmaceutioal puipcsfs: bat it was; open to serious objection m view of the fact that the chemicals employed for this purpose were not alaajs wasLedcut but remained in quantities that v-re nr. certain and prejudicial to its qaality. The iuppcted im risibility of its removing the lime has, accordingly, caused r.-ecu o! tartar to be cleeeed and sold as pure whoii it did not contain more than ö per cent, of Hih imrnrily. The major part, however, of that ntcil in commerce, or for culinary purposes contains the tartrate of lime to an extent much greater than 5 per cent, not infre quently being found, upon analysis, debased to a degree equaling one fourth or more of its entire weight.
