Mix the butter with the flour, beat up the t gas, add the cream, put finger, caraway seed and citron, to taste, then ttires teaspoonfuls of yeast, and milk enoujrh to make it of a right tiiickuctM Beat all thoroughly together "with a opoon. set it before ths fire to rise, and when it has risen drop it in cikes upon tins and bake thern. Ceebbe Omelet. Mix to a smooth batter three tablespoonfuis of tine tlour with half a pint ol milk. Add these to the tlour and milk, aud whisk ail the ingrelients together for half an hour. Boil three tablespoonfuis of rics, after washing it in three waters, in half a pint of water and three tablespoonfuis of milk. When nearly soft add two tablespoonfuis of white sugar, the grated peel of a lemon and the beaten yolks of two eggs. Stir rapidly until it is quite cooked. Then pile it up as a wall around a platter or plate. Bare tart apples, take out the cores, and stew them in the juice of the lemon, three tablespoonfuis of sugar and a little water. Cover closely, stew until soft, but not so much as to break to pieces. Flace the apples and syrup inside of the rice. Bat the whites of (he egs to a stiff froth, lay it ovec the apples, sift augar over it and brown lightly in a hot oven. Serve with sweet cream. Farm Notes. A half-breed Cotswold lamb, fed with a little mixed oatmeal and bran, and Buckled by a native ewe, will make an excel lent market lamb. Seed Corn. , Ohio State Journal. ' Tliere is ecirceiy a doubt that the farmers of Ohio lost, this year, an average of five buehels per acr.eof their corn crop because of the imperfect seed planted last spring. They all know the reason of that imperfection. The corn in shocks and cribs was frozen while damp, and thns the germ was impaired or destroyed. This should prove a leeson not to be forgotten for many yeirs. Seed corn for next year's planting so.ou.ld be telected now. An old and experienced farmer says that for upward of 30 years he has selected his seed corn early in the fail, and generally before husking time. His rnle is to select large ears from small stalks on which there are two ears, if practicable. He selects twice or three times the quantity which be expects to plant the following season, in order that he may at planting time select again from bis fall selections. He etripsoflfonly the outer shucks, and then deposits tha corn in a dry room or garret, where the temperature never falls below 15 or 20 degrees. By pursuing this course he always has sound corn for planting, and of the best quality. Our farmer friends should give this matter immediate attention. Bees.
