Many persons who are in tbe habit of freshening mackerel, or other salt fish, never dream that there is a right way and a wrong way to do it. - Any person who has seen the process of evaporation geins on at any salt works knows that the salt falls to the bottom. In the other case It is nearly as salt as when put in. Grate finely as much well-cooked ham as you are likely to require, iiavor it with a very little cayenne and some natmeg. Roll oat some good puff pasts very thinly, cat it into two perfectly even portions, prick in one or two places to .prevent it -rising too high, and bake in a quick oven till of a golden brown. Then take it out and let it stand till cool; then spread a little fresh batter lightly over tbe whole. This should not be done till the paste is perfectly cool. Watebmeloks .at Cheh.!!:?. A lady correspondent of the Evening Star has discovered a plan to keep watermelons in tbeir natural form and , iiavor for an indefinite length of time. She has successfully tried it in past seasons, and as a consequence has been able to treat her family to a watermelon snpper at Christmas time. The plan is aa inexpensive and simple one, and consists of giving the melon three or four -coats of varnish to exclude the air. She says tbey not only keep from decay, but that the .flavor and sweetness are retained, and when eaten at Christmas and Kew Year the fruit s?ems to be wonderfully improved in these particulars. Oatmkai. and Cocom-ce Oatmeal mixed with grated cocoanut produces a very attractive cake to both old and yound. These facts are worth studying by the still large class who do not see the use of agricul tural papers and teachers, etc.. and who think muscle is the main thing in successful farming. The truck farmer studies his market Knows wnat is wan tea, learns how to raise it when and where to sell it, believes in manure, buys it, believes in knowing all about his business, takes his paper, rads and thinks, don't kick at facts because they are printed, keeps his eyes open and drinks in knowledge from men and books. He keeps learning and succeeds in his business. "There is still a large class in our farming population completely stereotyped. Many take no agricultural papers, attend no fairs, no farmers' clubs, try no experiments, have no faith in improved tools and' stock, and are hardly able to tell at the end of the year whether they lose or gain in their business. Success in cultivating tbe soil is already, and is to be more and more, dependent upon brains. Men who read and think most plan most wisely and execute most akilf ally, will succeed best We need only the help we can get from the teachings of science, from journals, from fairs and clubs as well as from the dailyeexperiences of the field.
