Pick them carefully so as not to break the skin; split each one down the bck and baste with melted butter; then broil over a bed of live coals and baste twice while cooking. As soon as done lay each bird ea a thin slice of buttered toast, sprinkle with pepper and salt, put a little more butter and a spoonful of current jelly on each quail and serve immediately. To Cook .I'rairie Chickens. Dress and clean them, put an ounce of batter in each, then lay each one, blanketed with strips of bacon, on a sli of dry toast, in the dripping pan; as soan as they begin to get at all dry moisten them well with the drippings In yoorao. until they are cooked, baste and tarn them serer.il times. If you desire to get a larg yield of rich milk, give your cow watcrevtry day warmed and slightly salted in which bran has been stirred at the rate of one quart to two gallons of water.
