Although there are - many unsettled questions in regard to orchard culiare, there is one npon which nearly or quit all intelligent orchard tsts are agreed, and that is the soil must be made 'rich to enable it to suttain a proper growth of wood ar.d produce abundant crops of fine fruit. Th re are many ways of manuring the orchard; by- plowing under green crops of clover, rye, corn, buck wheat, or tbe various kinds ot millet, by applying mineral manure, such as. potash, lime and phosphorus to the surface, or by using barnyard ros nur. Our object in thisarticle ia not so ranch to indicate tbe kind of manure to ue. as to rge the imiortance of using some kind so as to increase the fertility of thp orchard, and to say now is the proper time to apply manure. . If yon wait until spring tbe manure will hardly become dissolved and appropriated ia tine to be of much benefit to the next crop of fruit, and would probably effect the growth of the wood so late in the

Beat one teaouplul of butter and two teacups of sugar to a smooth mass; sdd one cup of sweet milk, two teaspoonfuhj of cream -tartar, one of soda; llivor with Caraway or nutmeg; knead in Hour to make a soft dough; roll thin and bake ten minutes or until doue. .Molasses Cookies.--One cup of butter, two cups of rooiasses, one cup of bofling water, one heaping tablespoonful of soda; dissolve the soda' iu the hot water; two teaspoonfuls of ginger; just before adding the Hour put in one tea?poonful of pulveriz ed alum dissolved in as little hot water as l04sibie; knead them rather soft; roll thin; bako in a quick oven, but don't scorch them. Bkan Socp. Sos a coCeecupiul of white beans over night ; in the morning boil until tender they should then he quite dry; pass through A seive and add two and a balf quarts of stock, made by bulling a small eoup bone until the fueat separatts from the bone; three potafoes cut 6ne; parsley, pepper and salt to the taste; simmer about one-half hour and serve hot. Should the soup be liked thinner or thicker, add more or less stock accordingly. Tressed Chickens Take three or four chickens, boil and season as for the table; let them cook very tender, aud until only about a quart of broth remain in the kettle. Then take out and remove all the bones, and pack in an earthen dibli or pan. If it should tieed more seasoning, put in more sal r,pepper and butter. Cover with a plate and put on a lightweight. As soon as cool it cau be cut in slices and is ready tor the table. This is very nice, and will keep a long time in cool weather. Coddled Atple3 Wash the apples; do not peel or core them, as they sbould be kept whole, unless there are blemishes in them which should oe removed, cover tne apples to about half their depth in water, and boil slowlv about five or six hours cover ed closely. When about'balf done sweeten with sugar to taste; when done just right thywill look red. and the juice will be thicK when cold.' If too much water la added they will be insipid: It is difficult to give the exact amount, as the apples are more or less juicy. When the jelly is somewhat cooled, drain and wipe the oranges, and fill them with alternate stripes of the two co'ored jellies. Eich color must be allowed to E?t before the other is poured in When the oranges are perfectly old, cut them into quarters with a very sharp knife, and arrange tastefully in a . glass diah with sprigs of myrtle between them. Chop One some cold pressed ham, say abjut one fourth of a pound, put it in a basin with a tablespoonful of chopped pickles, a little len;.cr or cayenne; put about six ounces ot butter in a basiu, an4 stir quickly with a spoon until it forms a kind of cream; add the ham and seasoning, mix all well; have tbe randwicb bread cut in tbin slice; have already cut, thinly intermixed with fat. either cold roast beef, yeal, lamb, mutton, poultry, fowl, pheasant, grouse, partridges, etc., either of which lay evenly, and not too thick, on your bread; season with a little salt and pepper, and cover over with another piece of bread. When tbe sandwich is ready cut in any shape you like, but rather small and tastily, and serve. They may be set aray in a cold place if uot wanted, as they will keep, well under coyer for twelve hours. ' The Parent ot Inaomnla.
