The Ohio Farmer sajs: A ruaa who has lived fell his life on a farm stands but very little chance to compete successfully with men who have been educated and trained tor speculative pursuits. Saritoqa Fried Potatoes. The following is said to be all there 13 of the cook's secret for producing those world-renowned potatoes served at Moon's Lake Ilocsa, Saratoga Springs, every summer: Peel good sized potatoes, and slice tbem ss venly as possible, drop them into ice water. Have a kettle of lard, aa for fried eake, and vory hot. Put a few at a time into a towel, shake them about to dry tbem, and then drop into the hot lard. Stir them occasionally, and when of a light brown, take them out with a skimmer. If properly done, they will not be at all groasy, bat crisp without, and mealy within. Wheat ad Clover. Prof. Vockler says: All who are perfectly acquainted with the sutj8ct must have seen that the beat crops of wheat are produced by being preceded by. crops of clover grown from seed. I have come to the conclusion that the very bsat preparation, the best manure, U a good crop of clover. Avast amount ot mineral mannre i broueht within reach of the corn crop which, otherwise, would remain in a locked up condition in all tha soil. The clover plants take nitrogen from the atmosphere and manufacture it into their own substance, which, on decomposition of the clover roots and leaves, produces abundance cf ammonia. In reality, the growing ot clover is equivalent, to a great ex:ent, to manuring with Peruvian guano. Caxoieo IIonet. The candying of honey ia due to a part of the sugar becoming crytalized. The honey is just a3 good and as pure is ever, but not quite so pleasant to eat on account of the small grains of suzar. There is no way known to prevent thi, and the be9t honey, that made ironi clover early in the season, is more apt to be candied at the present time than the later made. By placing thebottleor jar containing the honey in a vessel of water, with sticks under it to keep tt from ' direct contact .with the bottcm of the vessel, and gradually heating it, the sugar will 1 dissolved and the honey become ci6ar, and last in that condition a greater or less time, according to the temperature fit which it i3 kept. If it should become candied again the heating may be repeated. Increase the Porkers. Every indication favors the business ol hog and pork production for the coming year. Among the many devices for keep ing butter in a manner that will preserve the fresh, rosy flavor of new, with ail Its sweetness, is the following from the Dutch es3 Farmer, which Is said to bo entirely suc cession: To three gallons or Drme strong enouirh to bear an ecs, add a quarter ol ninnd of nice white snear and one tableBDOOtful ot saltpetre. Boichs brioe, a&d when it ia cold strain carefully. Make your butter into rolls, and wrap each separately in aelesnwhite muslin clotb, tying up wiih a striisr. Pack a large iar full, weight the butter down, and pour over the brine until all is submerged. This will keep really rr.-jn-t batter perfectly sweet and fresh for wnolt) year. Bd carelul to not put upon ice baiter that you wish to keep for any length of time. In summer, when the beat will not admit of butter being made into rolls, pack closely in small jars, and, using the amubriiic, allow U to cover the butttr to the depth of at least four inches. These women always serve tbem up with tongue sauce. 2s ow it cannot be supposed that husbands will be tender and good if managed in this way; but on the contrary, very delicious when managed as follows: Get a large iar, CAlled the jar of faithfulness (which all good wives ke p on band), place your busband ia it and set him sear the fire of conjugal love; let the fire be pretty hot, but especially let it be clear, and a nova all, let the beat be constant. Cover him with affection, kindness and subjection, girn shei with modest, becoming familiarity aad spiced with pleasantry: and, it you add kisses and other confectionaries, let t hem be accompanied with a sufficient portion ot secresy, mixed with prudence and .nnrlnration. We would advise all good wives to try this recipe, and realize what an admirable dish a husband makes when properly cooked. Rural New Yorker. Brother Shearman is keeping a log of his voysge. Living in "Taylorville is a widow named Coyne, two children, a son and daughter, living with her. The story i3 that a young man named John Jordan has a long time defcired to pay hfe addresses to Miss Coyne, but she always repulsed him. Another man of this village was more successful iu his suit, and Jordan is reported a3 having been inordinately jealous of him. On the night in question, about half past one, the widow Coyne's house was surrounded by a gangot ruffians, evidently crazed with liauor, who acted in a most disorderly and boisterous manner. John Jordan was the.eader, and it was evident from their language that they supposed Miss Coyne's lover was in the house.and that thcy-baicometo trmltreat him. Hewasnc in the house, however, and Mrs. Coyne ap peared at the door and told Jordan that his rival was not Here, and requested the party to go away. They replied with boots and a shower.ol sticks and stones, and finally beginI ) pound as the widow's door and demand entrance. Mrs. Coyne told them that it they did rot go away she would shoot some of them. Tola did not have the desired effect, and she took a four barrelled revolver from her bureau drawer, and, stepping to the window, fired one charge. One of the cane threw up his hands aod exclaimed: "By God, Bhe's shot me!" He iell to the ground, and his companions ran away, leaving him behind. When the pistol was fired the son and daughter ran to where their mother stoo J, and tho former took tbe pistol from her band. In the act of receiving the weapon from his mother it was discharged aaiu, the ball entering the side of Mm Coyne, comipg out at her back. Dr. O'Brien nua at once summoned. The wounded man on the outside was found to be John Jordan, lie was (hot in tho abdomen, the ball entering jut below the ribs and lodging In bis body.
