They will not break up and grow fine and dusty, but are clean, and can be stirred as light as when first used. To Cure Beef for Drying. To four gallons of water add one pound of brown sugar, on9 pint of molaises, two ounces of saltpetre and fine salt until it will float an eg. Toil quantity will answer for a Quarter of beef. For drying, when the beet ia thoroughly piokied through, J take it out and hang where the drying process Is comparatively si;nv. 'lne time required to pickle through depends upon the size of the piece?, probably from ten days to two weeks. To Keep Sweet Potatoes, A correspondent of the Cincinnati Gizotte says: 'Procure dry forest leaves; place in a barrel or box a layer of leaves, then a layer of potatoes, and m on. Last fall I wrapped some of the finest in paper before placing theua in the leaves, and these were iound in the spring to be more perfectly preserved than those that were not thus enveloped, although all kept well." All the theories which have been advanced upon this subject of the value of a perpendicular or tap-root to forest trees is sheer nonsense from beginning to end, as proved by the success of the innumerable millions octrees propagated and transplanted by nurserymen for centur ies past, and 1 might add oj navure herself, for not a thousandth part of the wild trees of our forests have a tap-root after they are a dozen years old." Salt fob Hotter. The New York Bulletin says: Prominence has lately been given to the question of what is the proper salt to use in the manufacture of butter, and so important has the matter become that a short time ago a committee was appointed by the Butter and Cheese Exchange to make an investigation and report. The English salts, it has always been claimed, are the best for this purpose, a they are purer and contain no foreigu flavor. On the other band.it is said that the Onoudag salt contains a fishy llvor, which is imparted to the butter, and, of coarse, if such is tho ce, lessens its value. There is still a third party who hold that there is no difference, or, if any, it is so slieht that it caa not be distinguished. About Canary Birds. A clever writer for the Inter-Ocean says: Canaries are like flowers, they do not thrive unless their keep era love them. Nothing is more cruel than to keep birds and not attend to them, and this is (specially true of canaries. They do not live by seed and water alone,they crave equally companionship and love. They ought, too, to be kept in pairs, for they have a great deal to say to each other that they can not say to you, and it is delightful to watch their gosslpings and confidences. I possess two canaries which, though in no respects remarkable birds, are a source of constant pleasure and amusement.
