BUIING HEAT AND FISH.
Suggestions From tho Batcher, The Favorite Cuttof Beefand Howlt Looks When Vroli-l'olnta About Yeal-XoUa Fioni the I UU Stalls. sr. Louis KcpQbllcaa.l "Sei rants attend to the marketing of their rich employers while poorer housekeepers do it thcnuclTC?," laid an aproned batcher in a Baltimore market stall a few days ago. l4We make the most out ot the latter because they don't know how to buy, and of course wo get our pricci. Bonis servants make a little oat of ns and give thetneelves the credit for the' transaction by pocketing the difference. They aUo pilfer many articles which their masters pay for, and hera we get another edvrutoge by increased sale?. The housekeeper who tries to mako both ends meet should know a thing or to about purchasing her edibles how to get them cheaply and how to get her money's wrrtb, and if you want to makeahostof friends go ahead and get up eorae points for htr. She will appreciate yonr efforts." A butcher being found and questioned, said, with much geniality: "Sure 83 you live, American housekeepers have lot to lc3rn in tbe choice and purchase of meats to the be3t advantage; but then tho Amsrican butchers themselves are in some measure to blame from the way they cat up thoir moat. Now, in Kngl&nd, whera meats, especially beef and mutton, are better understood thin in any other countries, the mode of catting up ij very different from our way. Their prime cuts aic nil Mime, to tue exclusion of any inferior attachment?, and for fciich the highest prices can to demanded with a cler nomctence. Then come the cuts, ranking r.tnt in quality and price; and ?o on all down the ecalo to tho chsaceit and mcst inferior parts, oo that both teJJer ard buyer can know jntexactly what is Uein disposed of and the just equivalent Uovrever. though that is a mighty fair way, it conidn t be made to v?ork in thia country. Anglican butchers, you sec, are obliged, in f f Jf-dcfeuEe. to somewhat combine the erctllent and posrer parts in their cuts, especially in tho matter of beef, to meet the requirements cf housekeepers here, who, for tho most part, never know how to cook the poorer parts r.Ione in as palatable a manner as housekeepers of.other c mntrUtj, whore meat is far Bcarcer and dearer than h?re, and must consequently be made to go furthar and moro of a genuine treat than in this country. However, our own consumers may be taught to considerably Improve their charcee of obtaining their fill; money's worth by observing a few simple rules." Suppcse you cnVr some suggestions that may instiuct them," said the repDrter. Good enough. Weil, la the general saIcctfon of beef, for instance, tho hoasekeepsr will do well to remember that, if young, it will have a fine, smooth, open grain, a gjoi, wholctome rednets of color, and will feel tender, while tbe fat should b white rather than vellow the whiter and firmer the better. Indeed, when the fat of beef is of a deep or dull color the meat is oeldom goo 1, and rliould be Sfsieroaticftlly avaidol Wfctn ed with oil cakea tho fat of b?ef will be usually of this color and the ilesh ihbby. In the selection of any cut of beef jvhatevar a strict ob&ervacce cf these simple ralss will soltice to insure even tho moat inexoerienced buyer utalnst imposition. Than ppein, If beef is overfru tho fact will irske itself apparent by the smell, which will be sogetive of exctsilve bloodi dess, quite ss readily lis in the case of overkept or taintid b?ef, whose cdorb sickening. The last precaution will apply to every othr kind of znrat as well as to beef. 'in the way of steaks, let me eay tha1 there is ere sort, and a moderately pricsi one, that has not its superior for jniciuwü, nutriment, general flavor, and economy. Th! Is tte flat k,iteak. It is torn oat of a bulk of puro fat, in which It Is es thorcnhly imbedded is are the kidnevs thernsolves, ia boneless as a matter of course, and after baing deprived of a thin filmy skin and proo erly ecored criss cross with the knife, together with some pounding, if somewhat 'old, can't bs beat either for boiling or frying. In some ether cities the ilauk steak commands the highest prica, not even excepting the porterhouse, but la as yet comparatively unknown, aud consequently cheap, retailing between fourteen and sixteen cents a pourjti. Oh, yc?, the flank Is tun boss steak, and don't you forget it! Economical hoasskeepers would do well to go for it while it remain ch np. "In telecting veal but one general rale U neciEsry. Tbu whitest is the mcst juicy aud tnerf icre prereraoie. "Mutten should be judged by lt3 lino grain, pcoit color and white Int, and lamb will spef.k or itself cn much the pamo prinrl rvlfs. If the latttr has n greenish or yellow sh cast it is stale and unfit ti eat. Now, here let me afford a hint or two about mutto:;tfewa. The best aa oil ns th cheapo jt, for this purposo l3 the breast, Tnis part can bo bought for four or five cents a pound and a brt-asi wtiftbing three pounds would rukke an ninple ttow or main dinner dish for Ihree cr four Krrmn pereona with lively appotites " A pork bntcher, to whom the ropsrt r next nptllt d for information, was brief and Ror.iewhat curley, but coenmendably to the point "Oh. any body1 said he, "can Ml good pork from bad, if ho isn't a blamed idiot, uules it's a Tvotnan. If tno rind of pork is tough ard thick, then it's old; if it's thin, and springy, then it's youusr, and young park is meet d strahle. When porx Is fresh the meat will bo smooth and cool; if clammy, it is tainted, and shouldn't be, touched with a forty-foot role-cxccpt, it may be, for i ane. In c.hoosng bacon ees that the rind is thin, the at linn and of a reddish tinjre, and the lean of a good color and sticks pretty fast 1o the bore. It is then god, and not old. If yon are particular about a haaa, just stick a Rhr.rp knife under the bono. Ititcmei cut with h clean p!ciant smell, it is goo I. It the knife is daubed and ha? a uspiciou? ecent, don't buy it " A poultry dealer, to whom the reporter neat applied, was a wordy little mai, whoae fund of inrcrmatio? in h.'s particular line is cpmpreffed as follows: "The old way ot tistirg a fowl's tenderness cr toughness by yankicg it at tbe wing to see whother the etin directly underneath tears or not don't amount to much, and moreover epolls tho prerosscfslcn of the bird far the next invt'gator in case yoa don't want to buy. General appearances are better to judge by. It a turkey, for icstaice, is young, the legs will be black and smooth, the eyes lively, aedthsfcot flexible. If old, the eyes will bo tunken and the Let dry. In choo3ing hens tee that tbe legs and combs are limber, which means that they ore young. If tho lgs and combs are ro-gh ar.d stiff, thoy are dd, but may Va good enough for a pie or soup. A young goose will have a jellow bill and limber feet. An old gocae will have both bill and febt red and dry. Ducka, it young, will be limberfooted; if fat, hard and thick on the lower rart of the body. The same rule applies to wild ducks, whoso feet, though, are red, besides being smaller than thoso ot tame ducks. Gsme can be just as easilv selected, if vou know how, which most folks don'L Partridges, for instance, if yonng, will have bleck
bills end 3 ellov legs; if old, white bills and blue legs." 'F shtc ss," said a fish dealer with owlish eyes, wiiescre spit-curb, and an oracular manner, to whom the reporter next applied, 'fretbnes counts more with fish than any other sort of food. And why? Bscause they're out of their native element when exp:sed for f el. That's as natural as going to sleep; but then the desired fresaness evinces itfeli in various ways in different sorts cf Cfih. and llkewipo the staleaess, which ain't so much desired. A gold, edlb'e cod, let me say, will have verv red gills, the body thick at the neck, the tleh whito ard firm and tomething of brightness remaining In the eyes. When flabby, the cod ain't to he hankered after lea3t of all bocght. Hero is a fine salmon whore newness is attested bv the line redress of the flesh and particularly of the gill, the brightnes of the tcales, acd the stiffness of the entire body, ßhad, if gocd, are white and thick, pills red, eyes bright aad bDdy stiff and firm. Much tho eame requirement should be looked for in the mackerel and with extra care, for the mackerel is so tender that he doasn't carry or keep so well unbailed ss other fish. In choosing striped bas, if the eyes are sunken and the gills pale, they have been too long oat of the water. - Rhubarb Mo'd. Take one quart of red rhubard aod cut it in pieces; put it in a saucepan with a lid and let it boil till quite a pulp; melt a half-ounce of gelatine in bit water; when di?solved put it with one pound cf powdered white sugar to the rhubarb and boil for fifteen minutes; add a few drops of essence of lemon ; pour the rhubarb into a
mold. Next day dip the mold in hot water, turn out into a gias9 dibh pour round it some custard made as follows: Tae yelks of two egcp, a tumbler of milk, four lumps of sugar; simmer till thick; add a few drops of essence cf vanilla. Coldslaw Dressing. rhe yelks of three raw eggs, c. teaspoonlul of talc and the same of mustard, iiral these well together, then add very slowiy three tablfSDoonffal of olive oil aiid one of bstt white vino vinegar. "A Ouurter of fi Oup of Tea." MYee, madam," said tbe Dominie. "Just a Qusiter of a cup of tea, if yoa please, and half a slice of toast.
