IX IMPORTANT FOOD REFORM. Trodnctloa of Chemically Pore Cram or Tartar Total Elimination of All Lime Imprtti Sw Dlacorcrle In Itellolnc A Look Ptrlde Toward Tor rood. (New York Tribune. J)itcoTer!es cf. ranch importance on account of the relation they bear toward a more wholeeonie food apply, and conssqnently upon the public health, hve been yecentlj made In tho process of refining creirn of tartar. Cream of tartir, ai Is well Inown, ii a bitartrate cf potatsa puriSed from the crude tariar, cr argol, which called! in a crjetallice deposit upon the bottom and sides of wine casks durirg the lev mentation cf the wine. Thl3 tartar, in its crude etat, contains lime and other Imparitie?, which do prcccts cf refining known pri r to that here deicrlbed was able to entirej j . rroTf. It has been possible, It is tru, to r ec :l:z8 the lim to Bom extent by the aid of chemicals, and tb.13 methol wai jetcited to in, order to procure creau ot tarlar in truali quantities for rhirmsc3!r.':l pnrpcsfs: but it wai cpen to terioos oj wellen in Tiewof the fact Iba: the chemici! cmp!oyed for this parpo-s? wers cot alva?3 "waifceü out but remained In q'iaititifs fiai wee ucwrtain and prejudic'a' to its quality. The aup;oied lropcssibilitt cf its removing the lime has, accordingly, cauasd creasio tsrtar to be classed ard sold es pars when it did not contain more thin ö per cent, of this im rarity. The major prr, however, of that nd in commerce, or for culinary purpws contains the tertiate of lime to an extent much greater than 5 ter cnt, not infrequently being found, upon anal ysi d3ba;ed to a degree equaling oeIoarih or more of its entire weight. In a report upon tbe 8ubjct cf food adults: a-ion made to the New York State Board o? Health by Professors Chiniler and Lo7e, if is stated that of twenty seTen eamplej of cram of tartar bought from dealers as pare sixteen were adulterated with various 8 instances from 3 to 03 percent., while of the reznander all contained tartrate of lime, same AS high as 10 ö0 per cent. 7 he serious character of this adulteration is more readily apprec ated when it is recollected how largely cream of Urtsr enters into the preraraticn of thfc f jod cf every iarxdly. In connection with sada in biking powder it is the chief eent no w employed lor raiting and making light and digestible all oar biscuit, cake, and other pastry, and is besides, In many communities superseding Ihe oid fashiored yeast for all leavening purposes, so that it is empJojcd tasome extent in almost every meal of which we eat. The amount of cream of tartar used in this conn try In a year in baking powder and other-

wiee In the preparation of food, is estimated i pounas. n mis were .'J p3r cent pure a high estinnte we wou'd consume one million pound or mors cf lime annually as a substitute for bread- So large a deterioration beconoes appreciable in tue deprivation cf oar food of a portion cf its nutritive elements ot only, but if. as is now auppoeed, this ezcees of lime taken into the system has a relation to the painful affections cf tbe kldcejs o prevalent in trais country, ils bearing upon tbe health of the entire community ia tco importaut to be overlooked. The new process by which cream cf tartar u produced 1(0 percent pura that Is, with the lime totally eliminate J, by treating the crude material under pressure instead of usiDg any chemicals whatever for the purpose, was tne discovery originally of a German chemist, but has been developed and perfected by tte Royal Caking Powder Company of this city, through whose efforts a few years since ia b'talf cf a high standard of purity in focd, the public was rid of the poisonous alum baking powders at that time so prevalent The determination of this cjnipany io place upon the market onlv absjlntely pue jjoods, and tbe impossibility of doing tz'u from the cream of tartar cf comxerce, ma-e it apparent that Eoce new method must bo i ought by which cream of Urter could be procured in larpe quantities, free from lioie and chemically pure. The crpsra of tarter refiners of this country and Europa when apprcached upon the subject declared such a result impossible, and declined to incur the expenditure receiFary to maie ths trial. The Royal Bakirg Powder Company accsrlIngly retolvtd to rolve tbe prnb'em for itself, an, bavirpr fccnred ihe aid cf tbe beit chemists tf Europe ard America, proceeded with its investigations ad discjveries until the result, after eevetal yta:s of labor and tbe expenditure of overdo). 000 in the purchase of patents, perfecting of prccese3 and the erectitn cf bui.'dings ar d machinery, was xtacbfd in the comple:e attainment of tbe end Eoogut. Tbe works now owned by tho New York Taitar Comjany are lscated in Brooklyn, and exceed in tize ard capacity ary other irnilr refinery in tbe world. They produce a chemically puie crem of tartar, which is now extensively med for pharmaceutical preparations, and in the manufacture of the celebrated Pjal Biking Ponder. The energy and catJay that have efTectel this will undoubtedly ba fully rewarded by the public which will chiitl tenefi; by the atccfjfeful iRue of the invt-Rt?s-ion3. Poop'e are coming caily ti cere fully apprciata tbe vatue of pure and whoJeio-vse foo i. R? tbe eidcs.ve u.e of thi? chtmically pare -cream cf ttrtar, the Tvoycl Biking Towder is produced entliely free from lime, and absolutely pure, qualitits pcste;?d by no ether bakicc powders jet made. Sale of University Lands. Attcrccy General Hord gave an opinion yesterday concerning tbe new appropriation bill, which is published elsewhere in this paper. He also gave an opinion to the Auditor of S'ate concerning university lands. He holds that if a purchaser fails to pay any installment of interest on the deferred payn eUs cf purchase money when it bsr;om33 due, tbe contract is forfeited and the land rtverts to the State for the u;a of the uuivirsity, and the County Auditor is required to re-e'l under the statute. That at any tirre before a eecond eale, payment of the sum due with interest for th.5 delay and all ccstr, together with 2 percent dsraa;e3 upon the amcunt due on such land, shall prevent snch rea!e and revive the original contract. He hclda that tbe former delinquent owner in case of a resale may at any time within OD year redeem the same by complying with the statute, and that a eale for lesj than Ihe appraised value is a nullity.
