Such slighl reactions as occurred were Invariably formed by purchases for bot'a short and Ion? account, and prominent burs, la their attempts to coyer, came in competition with smaller shortf, who became alarmed and bought itcadily from opening to close. The principal retcon for the sudden chanze in the temper of speculation was the non confirmation 0! minor j current yesterday concerning the alleged embarrassment of leading firms and capitalists. Euyin? was increased by advices regarding the resumption work by many iron mills and streel works, by tae statement that the Pennsylvania Railroad Company would act in conjunction with the coal combination and by a further advance in grain. Considerable lines of stocks were taken by brokers here on telegraphic orders from Boston, Chicago and other leading cities, although the entire list shared in the upward movemeat. Union Pacific and Western Union, on account of the large short interest in them were the chief objects of interest. Coal steck?, Vanderbiit shares and grangers also figured conspicuously in the advance. Transactions asreiated 3t.0u0 snares, of which 97,000 were Lackawanna, 26,000 Lake Shore, 3G,(wO Northwestern. 19.000 New York Central. 7j.O)3 Bt. laul, 22,000 Union Pacific, and 37,000 Western Union. The market remains firm, and trade is rather better in this market than heretofore reported. Groceries continue to do a fair business, with prices unchanged. Sugars are very firm, and leading sta pies generally. Dried fruits are unchanged for the domestic article, and raisins In foreign are considerably advanced. In the drug market Iodine has gone skyward. In vezetables cabbtge and onions have gone upward. EgR have taken a drop of 4c per dozen. Wheat "About the same," as to price, and feeling covers the situation. Very little arriving and offerings scarce. Futures develop some Inquiries but sellers fail to materialize. New York lie higher, Baltimore J c lower, while Chicage U JKc firmer. Corn In local markets all color grades are in good demand, with only fair offerings, while white grades show an indifference upon the part of buyers, and prices have generally weakened. The region near Klgin, 111., is famous for tbe production of the choicest batter aud cheese made in the United 8 tates; and an account of the methods practiced there will ba interesting and profitable. The soil is the usual black loam noticeable on the prairie?, and grasi grows spontaneously wherever it can secure a stand. No cropi are cultivated except corn and oats, and every farm is a dairy. Elgin is the center of tbe district, and contains no creameries within the city proper, but the enterprising; dairyman of the surrounding country, by the organization of a Board of Trade and Excharse, succeeded in attracting customers for their product from all sections. The butter and cheese are Eold by sample in the rooms of the Board, and every ose who use3 the rooms as a median) for the sale of poods is compelled to furnish artie'es in strict accordance with the Eampks. The butter and cheese are graded and classified, and the prices obtained vary, of course, with the quality of the products. Any community of farmers may thns easily build up a market for their good3 in the fame manner, tbe secret of success being that all articles are sold upon their merits Graes being a staple crop, and rsldam a failure, the dairymen have xcellent pasturage in summer with an abundant supply of bay for winter, while the lanja farms are provided for with silos, and ensiiajr is made an important adjunct to the hay. The corn and oats are fed usually in the ground condition, and though admitting the value of roots for ffeding the crops of such are not large. Wheat is not grown, cor are tbe farms supplied with a variety of fruit, with tbe exception of apples and cherries. Thera being several large horse-breeding establishments in the region, the equine stock is excellent, consisting of grade Percheroca and Clydesdales. The creameries are owned by individual vrho buy the milk at a fixed price from the dairymen, though some of the dairies aro operated on the co-operativo system. The milk brought to the creameries is carefully tested as quality, that being below & certain standard refused. The refuse whey and buttermilk is sold, the patrons of the creameries having tbe preference of pnrchai e, it being used for feeding to pigs. The cream is separated

from the milk by th centrifugal process, and the entire workof butter-making is done by machinery. The skimmed milk is made into cheese, the fat being provided In the Ehape of lard, but euch cheese is not, however, sold at the same price as that made from the entire milk. Tbe dairymen have long been accustomed to ibe practice of baying fresh cows aud selling thoe that become dry, the calves being sacrificed when only a few days old; but as the Holsteins have been introduced, and the results from such cows eo superior to the forirer Etcck, dairymen are learning the fact that it is to their advantage to raise their own cows, which are certain ta yield largely, instead of buying any kind of stock that may be oilered. In addition to the lare quantities of milk med by the creameries, treinsof cars daily carry thousands of cans to Chicago, the prices ranging from two cents per quart at the creameries to three and four cents in the city. Although on many farms sufficient food is grown Tor the stock, yet the majority of dairj man purchase bran, thipstuff and oilcake for feeding and save their manure carefully. This practice assists very materially in retaining fertility, as the conetant ireiketing of the elements cf the soJ, in the ehape of milk, would, in the course of time, cause the soil to become impoverished. Eeing naturally very fertile, and well adapted to nearly all kindj of grass, the farmers find that by the sale of milk alone they can derive a larger profit thau by growing crops for market. A glucose factory furnishes refuse, which is utalized by the farmers, and with their whole attention given to dairying, and tbe feeding of the soil annually, they have but little fear of failure. By concentration of eilbrts the Elgin dairymen have created a market for their products near their farms, and a ready tale is found for all their produce.
