Mr- Septirtiiis Ptessc, whose name is familiar to many readers in the Scientific American, sag-, gests < a very, simple, riiethdd for cooling batter on this'princijdc IBat niay be employed by every housekeeper. It Is as follows: Procure a large new flower pot of sufficient size to cover the butter plate," and also a saiicdr largo enough for the Hower-pbt to rest in upside down; place a trivet or meat stand (such as is sent to the oven when the joint is baked}'in (he cancer, and put on this trivet the plato of butte}-; now fill the saliccr with water, nml turn the flower pot over the butter,so that its bottom edge will-he below the water, -The bole Iti the flower pot Brest be filled with a erfrk. the ’boiler will be io what we way. call: an air tight chamber; Let (ho whole of the outside of the flower-pot be then thoroughly drenched with-water and place as cddl oepot iis yon can. ; If this ■ be’done over night/ tba butler will bo os “firm as a roclr,” dt breakfast time, or if 'placed there ip the morning the butler will be qnit£ hard for use'at the boar for tea. Iho reason of this is, that when water evaporates it produces cold, ns in the case of the pitcher and tba cloth; .the porous pot draws op tho water, which ih warm weather quickly evaporates from the sides, and thus cools It, and as no Vatin air can now, got to the butter, it becomes firm and cool in tho hottest day.'
