When she isn’t being a housewife or playing bridge, she does her husband's business details and cooks. Her cooking isn’t confined to 146 W. Maple Rd. Although that's where her culinary work is done for the: most part, the fruits of the labor end up as often as not behind the counter of Warrick’s Drug Store, 38th and Illinois St. “I love to cook and I'm proud of my cooking,” Mrs. Warrick says. “I've been sending things —over to thas store for a long time. I plan the menus each week for several weeks ahead of time. Then the specialty foods I want to be sure about I fix at home and send over at the last minute, ” ” o
WHAT ARE these? Such items as homemade chili, salad dressing, lemon chiffon cake and French pea salad all come from the hands of the “main chef.” Farm wives who cook for threshers and hostesses who entertain armies are the ones who can make the most use of her recipes. Her lemon chiffon cake sounds like a pile and tastes like a combination of both. It's a perfect ending to a good meal. o s »
LEMON CHIFFON CAKE
8 sticks butter 4 tbsps. sugar 8 c. flour Work altogether like piecrust. Roll out and line bottom of long oblong cake pan and bake at 350 degrees until light brown. (It only takes a few minutes.) Filling: 8 tbsps. unflavored gelatin 1 c. cold water 12 egg yolks 24 c. sugar V; tsp. salt 1 ¢. lemon juice Grated rind of 3 lemons
Dissolve gelatin in cold water. Let stand. Beat egg yolks | and add sugar and salt. Grate lemon rinds and place egg yolks, salt, sugar, grated lemon rinds | and lemon juice in double boiler. Cook until creamy. Add gelatin | and place in mixer and beat. Allow to cool and get quite cold. Beat 12 egg whites and add 1% cup$ sugar a little at a time. Fold yellow mixture into whites and then place in baked ple shell. Place in refrigerator overnight to set. Cover with whipped cream before serving.

Two ways to speed dry beans to the tender good-eating stage are to cook them in a pressure saucepan, or else to boil them gently in an ordinary saucepan with just a little baking soda added, say food specialists in
the Bureau of Human Nutrition snd Home Economics, Agriculture Department.

in dry-bean cookery, the food scientists have tackled a problem that kept some homemakers from using the pressure saucepan for dry beans. The

pan’s capacity at the start of cooking. That is, in a fourquart pressure saucepan, it is best to cook no more than 1% cups of beans with their soaking liquid.
TWO CUPS of soaking water are enough for each cup of dry beans that are to be pressure cooked — less water than is needed if beans are to be boiled in an ordinary covered saucepan. Beans can be soaked for one hour in hot water after boiling two minutes; or they can be soaked overnight in a cool place. Beans have fullest flavor if cooked in the soaking water, One cup of dry beans makes about three cups when cooked=—enough for four servings. Best way thus far found to keep dry beans from foaming high during cooking — particularly pressure cooking—is to add one tablespoon of salt pork drippings or other fat to the cooking liquid for each cup of dry beans. - » 8 8 FROM ITS experiments, the bureau recommends the following method of cooking dry beans under pressure: Bring soaked beans, liquid, fat and seasonings quickly to a boil in the covered pressure saucepan
and let steam escape for one minute. Adjust the pressure indicator and over low heat bring pressure up slowly to 15 pounds (250 degrees F.). Regulate the heat to 'hold pressure steady and time the cooking according to bean variety; Great Northern, large lima, or red kidney beans, three minutes; pea beans, five to 10 minutes; pintes, 10, minutes. Remove saucepan from heat and let pressure go down at room temperature. These directions cqunt on slow rise and fall of the pressure for additional cooking time, and to help cook the beans evenly.
