On Carrots On Way Out

may be on the way out. For many years, farmers, housewives and nutritionists beHeved carrots should have fresh, green tops when sold in stores. Science now has disproved that belief. Tests have shown that while carrots are growing, the leafy top manufactures sugar, starch, protein and other nutrients for the root. But once the carrot is out of

versed and the top draws moisture and nourishment from the
carrot, » ” .
BECAUSE OF this belief, whole fields of carrots were dis-
carded when frost or something else caused the tops to wilt or turn yellow even though the crop itself was not damaged in any way. Also, the green tops accounted for about a third of the shipping space needed to get the vegetable to market, where the tops continued to live at the expense of the carrot itself.
Under the new prepackaging process, the store life of topped carrots is increased from four to six times that of bulk carrots. Topped carrots also retain their freshness and food value from seven to 10 times longer inthe home refrigerator. —- The experiments indicate that similar advantages might be expected for other root vegetables like beets, radishes and turnips. The advantage of topped carrots are many, starting in the field and continuing through the store to the customer. Savings are realized in labor, transportation and packing costs. The ‘carrots are easier to handle in stores and in homes and give consumers a more nutritious and tastier product.
