ing developments. The Norwegians have been’ subtly slipping whale steaks into American frying pans for some months now to test our reaction to the red-blooded meat which tastes more like beef than fish. Now we're going to get whaleburgers. They'll be individually packaged, and frozen. , The season for catching fin whales, orle of the three edible varieties caught off the coast of Norway, is in full swing. ” ” » “IT'S GOING very nicely, too,” said Walter Hecht, representative for Kristian Gjolberg, owner of a fleet of Norwegian whaling ships who is responsible for most of the meat shipped here. “Naturally the market is not as steady as beef, since you still have to g0 out and catch the whales. But within a few weeks we should start receiving the biggest shipments yet sent to the United States.” Whaleburgers weren't econcocted to use up loose ends ‘of

I a sh

whale meat, since steaks seem to be as tender from one part of the whale as another. (You can get four tons of tenderloin from each fin whale, in case you thought of ordering a side of whale for the deep freeze locker.) But the whale promoters frankly admit they're seeking variety to sell their product in this country. They found that by mixing ground whale meat with about 10 per cent beef suet, they got a very tasty burger. ¢ “Whale meat has only about one-tenth the fat of beef, so it

had to be mixed with the peef suet when it was ground,” explained Mr. Hecht. The number one guinea pigs for whaleburgers have been students and faculty of Hunter College. - ” n “WE DECIDED fo serve whale meat to the faculty about six months ago.” explained Edwin Gaynor, director of food service at the college. “It was partly as a joke and partly out of curiosity. It's always interesting to watch the reaction of faculty members, even on normal things. We like to see if they react like average people.” The students heard about it and they wanted to try it. “So now,” Mr, Gaynor added, “we serve it about once a week. Our chef fixes whaleburgers with the beet ‘shet and a few bread crumbs., He also breads whale cutlets just like veal cutlets.” A whaleburger costs 30 cents at the cafeteria and whale steak costs 65 cents, The average price to the housewife is expected to be about. 90 cents- a pound. If things go the whalers expect us to be using about 10 million pounds a year before long. “We're looking everywhere for more edible whales,” Mr. Hecht said. “The Norwegian whales are best but the Iceland whales may be good enough for Sausage."
