An Exofic Recipe...
*" HUNGARIAN BEEF GOULASH 2-1b. boned chuck or 1 thsp. vinegar, cider or
round beef, 115 ‘in. tarragon thick = ° 1 tbsp. caraway Flour (about 13 c.) 1 tsp. marjoram 1 tbsp: fat 1 tsp. capers, chopped
1 Ib. white onions, peeled .2 bay leaves and shredded Parsley sprigs 2 tsps. salt 14 ¢. dry Sherry wine 1 tbsp. sweet Hungarian 14 c. water or soup
paprika stock
Cut beef in 14-inch or 1-inch cubes. Dredge well with flour. Meanwhile heat fat in pressure cooker. Brown meat well in hot fat, turning oeca--gionally. Add onions and seasonings and blend. Add liquid. Close cooker immediately and process at 15 pounds pressure for 20 minutes, if meat is cut into 14-inch cubes, and for 15 minutes if cut into 1-inch eubes. Let stem return slowly to down position, open cooker, remove bay leaves and parsley and serve four to six with broad noodles or boiled potatoes. Note: If extra bright-red color of goulash is desired, heat 15 tablespoon butter and add one teaspoon Hungarian paprika and two tablespoons wine or water. Let come to a quiet boil and pour over goulash before serving,

Remove from the shell, then freeze the whole egg or the whites and yolks separately, To prevent yolks from becoming gummy in freezing, whole eggs and yolks need to have sugar, sirup or salt added, depending on how they will be used, For example, add te eggs for scrambling and add sweetening for cakes ‘and desserts, Here are directions from the Bureau of Human Nutrition and ‘Home Economics:
WHOLE EGGS: Break eggs into Sloan oe Stir ih La fork eno break and mix well with whites, (Don’t beat because this whips in air.) To each cupful, mix in 14 tablespoon of sugar or lightcolored, mild-flavored sirup, such as corn sirup or honey, Or add % teaspoon salt. Then put through a medium-mesh sieve,

PACKAGING: For convenience and to save thawing more egg than will be used at one time, put just enough in the contdiner for one cake, for example, or for scrambled eggs for one meal, or for the quantity needed for a favorite recipe—and label accordingly. The label should tell the date when put into the freezer, the quantity—both measurement and number of eggs, and the salt or sweetening added. Pack in moisture-vaporproof containers. These may be waxed paperboard cups, fold-up cartons with cellophane liners, métal or plastic freezer “boxes,” or even glass jars, tightly sealed. Leave ¥-inch headspace for half-pint containers; 13-inch for wide-top pint containers; %-inch for narrow top pints, such as canning jars, Freezing: Freeze promptly and store at zero F. or lower, Thawing: Leakproof containers may be placed under 2old running water to thaw, Otherwide, set the container in the refrigerator to thaw slowly, or out in the kitchen to thaw faster at room temperature. Before using, mix the contents of the container thoroughly. For safety the best rule is: Thaw only” the quantity to be used at one time, use within 24
