"TRAFFIC and convenience are the rules in setting a

table for a buffet.

And the order of elements is exaet-

ly the same whether it be wedding breakfast or midnight

supper. Start with a longish table first (two bridge tables together provide a good nucleus in a small room. A tea wagon is an excellent choice, too, for a more restricted area. If the buffet meal is set on a table, a long, colorful cloth fs a better choice than mats or a short cloth that just reaches the edge. Lay out silver first at the side of the table where the traffic is to begin. Knives and forks, in pairs, are enough flatware till dessert and coffee are reached. Adjacent to the silver stack folded napkins or place them in a row, ” n » WARM DINNER plates are next in line. Depending on the size of the table, and the num ber of guests, the plates can be stacked or placed side by side. Then situate your first platter of food with its serving tools. Or, if this i= a hot meal, a chafing dish. Next in line of convenience are rolls or bread already buttered. Then salad with spoon and. fork in the bowl. Dessert plates: come next. They may either have the confection on them or include empty plates stacked beside the dessert server. A row of dessert forks and spoons should be immediately adjacent to the dessert plates.

» n n FINALLY, THERE should be coffee or tea cups, with spoons placed on saucers. They should be lined up on the table opposite the starting point. The coffee urn or tea service should be next to the cups. In the center of the table line up condiments, side dishes, candelabra and the centerplece arrangement. Use lighted candles in the evening only. If the room is very dark, they may be lighted for a luncheon.
