As Woman
Of the Yea ;
RMA ROMBAUER, 74-
year-old author of the famous cook book, “Joy of
Cooking,” has been chosen’
“Woman of the Year” by Pageant magazine, “To at least a million and a half housewives, Mrs. Rombauer has been the woman of of the year every year for the past two decades;” says Pageant, » “The first edition of ‘Joy of Cooking,’ written when Mrs, Rombatuer was 52, has sold nearly a million and a half copies and has been reprinted 44 times. It's currently racking up better than 15,000 sales a month.” Despite the fact that Mrs. Rombauer has become one of the most famous cooking authorities in the country, she can't tell Chicken Marengo from’ Escalope de Folie Gras Talleyrand. ‘ » u » SHE'S THE KIND of cook who is more concerned with making a lowly frankfurter or a tired old plece of ham seem interesting than in doing something with truffies.
“Joy of Cooking” started out by being a list of recipes Mrs. Rombauer made up for her children who were about to be married because, as she tells it, “they didn’t know how to poach an egg.” Friends and acquaintances who read the book decided they wanted a copy and prevailed upon her to have it printed. It featured a new way of giving a recipe—a step-by-step method eliminating “the oldfashioned list at the top of the recipe and listing the ingredients as the mixing process goes along. The book was first published in 1931 but it wasn’t until a revised edition in 1943 that “Joy of Cooking” became a best-seller, It was issued just as the household help of America was taking up posts in war plants, when not only servants were scarce hut butter and meat also, and when war brides were frantieally wondering how to boil water.
