be simple or elaborate. If you mark the holiday seagon with an egg nog party, you can serve your drink with or without an accompaniment. Christmas cookies with nonalcoholic egg nog are like a steady couple . . . they go together. For that feminine touch serve little cakes cut in different shapes, arranged smartly and topped decoratively. Spiced coffee is the perfect accompanjment. A COFFEE egg nog includes seven eggs, beaten until fluffy. Add one two-ounce jar of ingtant caffein-free coffee, "one and one-fourth cups sugar and one-fourth teaspoon salt. Continue beating until coffee and sugar are dissolved. Add

three and one-half quarts chilled milk and one teaspoon vanilla. Mix well and chill

Serves approximately 30. For a creamy egg nog beat three eggs until foamy and add one-eighth teaspoon salt and one-third cup sugar. Beat until ingredients are well blended. Stir in two and two-thirds cups evaporated milk, two- thirds cup water and two teaspdons vanilla extract, Chill from three to four hours before serving. Makes one quart.

THE TRADITIONAL egg nog includes half of one fifth of whisky, half of one fifth of cognac, one pint of milk, one pint of heavy cream, threefourths cup sugar, a pinch of salt and one-half dozen separated eggs. This will serve 10.

Cook spices, honey and grated rind with two cups water: for 10 minutes. Let stand one hour and strain. Steep tea in boiling water for three minutes. Then add fruit juice and spice mixture,- Serve hot for ap-

and ‘molded gelatin desserts, and into puddings. When you buy tangerines, choose those that have a bright color ard are firm to the touch for they'll have the most juice. Puffy large tangerines may be dry and stringy inside.

BEARNAISE SAUCE Mix the yolks of two eggs and one-half ounce of water in the top of a double boiler. Beat mixture while heating for 10 minutes or until stiff. When mixture is firm, fold in slowly one-half pound of melted, lukewarm butter. Add the juice of a lemon quarter, a pinch of salt, a pinch of cayenne pepper, one teaspoon water, a pinch of chopped parsley and 4 dash of beef extract.
