ALL ICED COFFEE starts with good strong hot coffee, remember. : I asked Ellen Saltenstall of the PanAmerican Coffee Bureau for the top know-how, Here's her tonic answer. There are two ways to prepare it, . : ® = PRE-COOLED METHOD Make coffee regular strength —-one standard coffees measure (or its. equivalent, two level measuring tablespoonsful) of coffee to each three-quarters of a measuring cup of freshly drawn water. Cool in non-metallic container for not more than three ‘hours, or, if the container is tightly covered, chill in refrigerator. Serve in tall glasses with ice, adding simple sirup or sugar and cream to taste. : ” FJ ” QUICK METHOD AND THE ONE WE LIKE BEST Make coffee double strength, by using half the amount of water to the usual amount of coffee. Pour hot over ice cubes in tall glasses. + The extra strong coffee allows for the dilution caused by the melting of the ice. Serve with simple sirup or sugar and ‘cream to taste.

COFFEE FLOAT

One and one-half cups cold double-strength coffee, one cup light cream, few grains salt, one-half cup sugar sirup, one teaspoon vanilla, one pint coffee ice cream, Combine coffee, cream, salt sugar sirup and vanilla, Pour into tall’ glasses, add scoop of coffee ice cream to each glass. Serves three, ” » ”

COFFEE-COLAS

Fill tall glasses with ice. Pour double-strength coffee over ice, filling glasses one-third full. Add ¢ola, filling glasses to top. Garnish with twists of lemon peel.

Don't ‘Seem Too Casual

By ALICIA HART

SUMMER is the -season when the vocabularies of teen-agers and their parents most often seem to grow into separate languages. Particularly is this true when an lirate mother begins evaluating the things her daughter calls casual. | Dear to a teen-ager's heart after the restrictions of the school year are the cool-if-not-beautiful hairdo, the loose, rélaxing shoes, the comfortable old clothes. All these are likely to be labeled “sloppy” by a parent interested in her offspring’s appearance. Oftentimes, the term is justified. 2 | There’s no logic behind the rea-| soning that shoes are more com-| fortable when they're dirty, that hair swept off the nape of the neck must be skewered up |i clumsy knots, that play-clothes must necessarily be minus buttons or trailing their hems.
