Nectar Top Cream Pie—
But Good
This Nectar Top Cream Pie is a two-layer job and as beautiful as can be. The bottom layer in the crisp pastry shell is a dainty vanilla-flavored custard. Then on top goes the luscious, thickened gelatin made of apricot whole fruit nectar. But good.
= n ” NECTAR TOP CREAM PIE 1% c. milk 14 ¢. granulated sugar 2% tbsps. cornstarch 3 tsp. salt 1 eg® . % tsp. vanilla extract 21; tsps. plain gelatin : 114 e¢. apricot whole fruit nectar Few grains salt 2 tbsps. granulated sugar for gelatin 1 tsp. lemon juice 1 baked nine-inch pastry shell
Scald milk over hot water.
Blend together sugar, cornstarch and salt. Stir into milk and cook and stir until thickened. Cover and continue cooking 15 minutes longer. Remove from heat and add beaten
Return to heat and continue to cook and stir about three minutes longer. Remove from heat. Stir in vanilla. Cool. Soften gelatin in one-fourth cup nectar. Heat remaining nectar and dissolve softened gelatin in it. Add salt, sugar and lemon juice
and blend thoroughly. Cool until}
slightly thickened. Pour cream filling into baked shell. Pour thickened nectar gelatin over top. Chill thoroughly before serving. Serves six to eight.
