3% c. pearl tapioca 3% tsp. salt 2 c. scalded milk 1 tsp. vanilla 1 egg 15 c. sugar

Soak tapioca in enough cold water to cover for one hour. Drain; add to milk and cook in a double boiler until tapioca is transparent. Mix the yolks with the salt and sugar. Combine by pouring hot mixture slowly into the egg mixture. Return to double boiler, and cook until it thickens while stirring constantly. Fold in egg whites beaten stiff.’ Chill and serve. Mrs. G.R. Today we print her blow away fudge recipe. » » s » 8 » BLOW AWAY FUDGE 2% c. granulated sugar 1 oz. bitter chocolate 2; c. water 2 egg whites 1, c¢. white sirup 1 tsp. vanilla Boil without stirring sugar, water, chocolate and sirup unti it spins a thread. Pour without stirring over stiffly beaten egg whites. Then beat until mixture thickens. Add one teaspoon butter and vanilla. Turn out on waxed paper. Break in pieces when cold.

Blend graham cracker crumbs with butter or margarine and the two tablespoons sugar; press into bottom of a nine inch spring pan. Bake in a very moderate oven (325 degrees F.) for five minutes. Cool. Press cottage cheese through a fine sieve or whip thoroughly with electric mixer. Add one-third cup sugar, the flour, salt and mace which have been sifted together. Add well-beaten egg yolks and vanilla. Blend in cream, Add remaining one-third cup sugar gradually to stiffly beaten egg whites. Fold this meringue into the cheese mixture; pour the mixture on top of the crumbs. Bake in a very moderate oven (325 degrees F.) about one and one-fourth hours or until “get” in the center. Cool before removing from pan. Do not
