Three pounds beef, three teaspoons salt, pepper, paprika, one tablespoon chili powder, one cup Burgundy wine or one cup water {with one tablespoon lemon juice, two cups cut-up carrots, two cups cut-up celery, one cup sliced onion, foyr cups cut-up potatoes, two tablespoons minced parsley. Use less tender cuts of beef and cut in uniform pieces one to twoinch cubes. Dredge meat in a paper bag containing a mixture of flour salt, pepper and paprika. Brown in three tablespoons hot |fat in heavy kettle, turning to {brown meat on all sides. Add the {wine or water and lemon juice jand enough boiling water: to al'most cover.
