Combine the shortening, sorghum, sugar and egg. Add the dry

A family life course set up for homemaking, the classes are quite valuable to Lucille, since she will be married next fall. Taught on the unit plan, each
. class member cooks as any
homemaker would for an average American family. Some foods from the student cafeteria are prepared by the class. This gives each student experience in preparing amounts ordinarily too large for class consumption. ; Mrs. Margaret DeHoff, assistant foods gnd nutrition professor, and Miss Hattie Lundgren, home. economics department

preparing turkeys -and other fowl during the holiday season.

that the bird can be roasted

may be stuffed the night before. She suggests that a heel ‘of bread be placed at the opening to keep stuffing in, Skewers ure recommended by Mrs. DeHoff ‘to help close the openings made for stuffing. Cord. can be laced on the skewers, sewn. The skewers and lacing are easier to remove after the bird is cooked. A shallow pan roasting pan is recommended by the twp nutrition ‘teachers for the best roasting results. Complete circulation of air around the bird is an important factor for good results. A Vshaped rack is the best now on the market. = = " FOWL should be roasted breast down, according to the nutrition experts, This lets the natural fat of the bird run down over the meaty sections making the bird self-basting.

This step is not necessary for good results, however. toasting time should be determined by figuring 20 minutes for each pound. An eight to 10 pound turkey should be cooked from three to three and onehalf hours at 325 degrees. .A larger bird should be cooked longer at a lower temperature.
