made. Mrs. G. Carter. PRIZE WHITE CAKE 3 c. flour 1; tsp. salt 2 tsps. baking powder 2 c. sugar
1 tsp. vanilla 1; tsp. almond extract
1c. shortening - 1 c. milk 6 egg whites, stiffly beaten
Sift the flour once, measure, add baking powder and salt and sift together three times.. Cream the shortening thoroughly. together with the sugar until light and fluffy. Add the flour, alternately with the liquid, a small amount at a time. Beat after each addition until smooth. Add the flavoring: fold in the egg whites. Bake in two greased 9-inch layer cake pans in a moderate oven (375 degrees F.) for 20 minutes. Spread seven-minute icing between the layers and over thé*cake. Coconut may be sprinkled on top of the icing, if desired. Good cup custards can be made out of the yolks you have left from the cake.
