Carlson of the University of Chicago, in urging Congress to pass a law protecting mere human-beings from. their queer antipathy toward worms. The elderly Dr. Carlson, who is one of the world’s leading physiologists and who has an abiding respect for bugs of all varieties, put it this way: “There is a general feeling in America that an apple with a wormhole in it isn’t fit even for a hog; so we spray our apples, the worms (he meant the intelligent worms) stay away, and we consume the insecticides.” You get the idea. People are dopes. And not only in connection with apples.
A Biological Stupidity “IN THE DAYS of the Roman empire only the wealthy people had white bread,” Dr. Carlson continued. “The slaves ate the good, brown bread. And white bread to this day continues to be a social custom and a biological stupidity.” - Worms, weevils and other brainy beasts equipped with 16 pairs of legs, said he, are delighted to make a meal of whole wheat flour. “So we bleach it, treat it, process it, and cause the bugs to stay away and only human beings eat it,” he said. That still isn’t all For 25 years, Dr. Carlson told .the statesmen (who rapidly were losing their appetites for lunch), we freated our flour with nitrogen trichloride. This substance, known to the trade as agene, helped bleach it white and usually was applied in the form of gas.
