Ideal Seasonal Dish By GAYNOR MADDOX THERE'S no pleasanter ending to a warm-weather supper than a tall, tinkling

glass filled to the brim with frosty iced coffee.

Remember, however, that perfect iced coffeee starts with

good, hot coffee, Try either one of these easy-to-follow methods: :

measure (or its equivalent, two level measuring tablespoonfuls) of coffee to each three-quarters of a measuring cup of freshly drawn water. TWO: Cool in a non-metallic container for not more than three hours, or, if the container is tightly covered, chill in refrigerator. THREE: Serve in tall glasses with ice; adding simple sirup or sugar and cream to taste, QUICK METHOD ONE: Make coffee double strength, by using half the amount of water to the usual amount of coffee. — TWO: Pour hot over ice cubes in tall glasses. The extra strong coffeee allows for the dilution caused by the melting of the ice. THREE: Serve with cream and simple sirup or sugar to taste, You'll find that simple sirup makes the ideal sweetening for iced coffee. Just boil equal quantitles of sugar and water for about 10 minutes, stirring until the sugar has dissolved.
